In Montreal: Kaizen, L'Un des Sens, Pintxto, Jun i, Laurie Raphael (don't like ambiance)

My most tattered cookbooks:

Fish and Shellfish by James Patterson is really useful, use it a lot. Also, I currently like Le Bernadin Cookbook by Eric Ripert, it's superb, and more for special occasion unless you substitute as needed.
