I agree - no need for books unless you make something special like osso... Good quality imported pasta, good canned tomatoes, nice olive oil and good veggies- this is all you need! And a proper pot for making long simmering past sauce- a dutch oven.

thank you all! DId look at youtube and Manjula and cooked for 3 days non-stop! Made dal, dosas, some chutneys and palak paneer. All came out awesome. WIll be making it all regulalry, so delicious.

Need help with candied peel please
I had a big buddha's hand and tried to make candied peel following a recipe I found online. However, even after boiling in syrup for more than 2 hours, it never hardened after I took it out. I was not sure what I did wrong and now, after two days of drying out on a cookie sheet, it is still wet and does not really harden as it supposed to. Is there anything I can do at this point to save it? I still have the syrup- should I reheat and try and cook it a little longer? How long? The syrup I made was 1:1 water and sugar as the recipe called for,

Gift ideas for European Friends
I travel bck and forth all the time and my Dutch friends LOVE dried fruit and especially berries from Traders. I bring loads of dried cherries, cranberries, blueberries and such, as well as mangoes with chili, cashews with honey and sesame, and other TJ novelties. They do not have stores that sell these things. Sometimes I even bring larger bags frm Costco: their dried cherries and blueberries are really nice and make lovely gifts

I tried for a few days for November and there is NO availability. Tried October- nothing. Tried September- nothing. Is this as bad as it looks? Should I try to call them instead? Wanted to build a weekend trip from Amsterdam around a dinner there but it seems more difficult than I thought. Any suggestions?

If you like fish, I would recommend to do two things: 1) visit Albert Cuyp market and try some hot smoked mackrel and eel there- fabulous! 2) if you have a few hours to spare, take the bus (about 20 min) from Central Station to the lovely seaside town of Vollendam, which is known for its smoked and fried fish and try everyting. Buy a whole smoked eel vaccum packed to take home ( it is not meat and IS legal). It is truly fantastic and not available in US. The fish restaurant Visaandeschelde is pricy but really wonderful for a celebratory meal.

How to serve whole poached salmon
I just made a lovely sauce for poached whole salmon by mixing sour cream thinned with water with a little wasabi and lemon juice and plenty of salt, pepper, chives and tarragon. It was really good
Delivery prices at Golden Garden
Not sure what is going on: every time I ate in it seems cheap but the delivery is always expensive. Do they already include tips? I added up the prices for the things I ordered and came out $10 less than what they charged me and I included the delivery charge. I tried to explain it to the woman on the phone but she did not seem to get it. I did not want to press it so decided to pay and shut up. I like the food and like the people who run it and want to keep going. But I am a little bothered by it. Did you notice them overcharging?

We just had it yesterday and it was really great. Does anyone know how to make it at home? Looking for a recipe that produces a similar result- moderate heat that let's you enjoy the taste and texture, and a nice balance of chili and meat. I looked on line but the recipes do not call for silken tofu, which was obviously used there. So what is the secret? I tried it in other places and the heat was always too overwhelming for me.

Can you please suggest what olive oils to try there? I never know which ones to get and end up buying oil in Traders although I am at Arax every two weeks or so.
