In And Out in Kingman AZ. Hit that one before SoCal and you'll know whether you want to make it a regular part of your repertoire. I know I would. One of only 2 things I miss not living in SoCal anymore.

If you visited RI 3 times and are still unimpressed then indeed you ordered poorly.
In retrospect, if one were to order things that are readily found on Mexican menus around the country you might just walk away thinking RI was average. But with a menu full of things that are hard if not impossible to find anyplace else, to order enchiladas or a burrito is not the way to go.
In the future, I'd recommend these standouts:
Puntas De Filete - filet tips in an almond mole sauce with bacon and serranos. My ex would rarely order anything else.
The aforementioned Papadzules are awesome - masa triangles, filled with chopped hardboiled egg, covered in a green pumpkinseed mole with pickled red onions.
And the Snapper Veracruzana is one of the best versions I have had anywhere. The addition of sesame seeds to the fish's coating is an inspired touch.

Red Iguana = "Americanized Mex"???
Makes it sound like you've never eaten there. Pray tell what "American" Mex places serve Papadzules or Entomatadas? The Red Iguana menu is mostly authentic, regional Mex dishes, including all 7 moles, all of which are excellent. And I can name at least a dozen dishes that have neither sour cream nor cheese. Do they have burritos and enchiladas and tacos? Sure, but to call the restaurant "Americanized" is devoid of factual basis.

Try to hit Winnemucca, NV for breakfast and head for The Griddle, on business 80 through town.
That should stick to your ribs long enough until you hit Salt Lake City, where I would recommend you head for Red Iguana. Easy access from the interstate, and arguably the best Mexican food to be found for hundreds of miles in any direction.
Another fave of mine is CharcoBroiler in Ft. Collins, CO. Total retro steak joint that's open for breakfast.
Salt Lake City -- Chinese food?
I'd recommend Szechuan Garden in Sandy. 1300 E and 8600 S. The chef reached highest status in China. Broad menu, and everything I've had has been excellent.

Thai Siam is most convenient to I-80. Bangkok Thai is overpriced and overrated. I'd choose Thai Garden, hands down.

While in Logan, Crumb Brothers is worth a stop for a few minutes. Unbelievably good palmiers, and I'm guessing everything else they do kicks butt too.
Anything decent in Glenwood Springs?
Le Rendezvous is OK. Had one really good meal there, but last time was only so-so thanks to a crappy steak. The BBQ place on the other side of I-70 is not bad if you don't mind Bible tracts with your meal. Best bet may be Glenwood Canyon Brewery.
Best dinner in Salt Lake?
I had forgotten about Spencer's. Another fine red meat desitination.

upscale vegetarian in Vegas?
Seconding that emotion for Rosemary's. Great value, great service, nice selection of inventive dishes for veggie types. Cumin gouda YUM!!!
Best dinner in Salt Lake?
These would be my choices:
Ethnic - Red Iguana (regional mex) and Mazza (middle eastern, 2 locations) are in a class by themselves.
For red meat with a view head for the Steak Pit at Snowbird. Red meat and big wines in town head for Fleming's. Yes, it's a chain, but they kick butt.
Cucina Toscana gets the nod for best Italian.
Assuming you will also be eating breakfast and lunch, you might want to check out Les Madeleines. The Kuong Amun (called "crack" by us regulars) are the finest baked goods ever to pass my lips. Lunches are good too.

Except for the all caps, I agree with Tonto. Only the Cardinals' stadium in Glendale, AZ has worse stadium food. Considering the newness of that facility I was amazed at the 1970's high school football game grade crap that was served up. Same type of swill at the 'dome.

Thanks for the input. Some other factors... atmosphere is more important than food and wine, as long as those 2 don't suck. Might wind up going the bubbly route instead of by the glass. I will have arrived via redeye early that morning and will not have checked into the hotel yet, so we're talking way casual dress.

Thanks all. Casellula looks perfect for a Saturday afternoon hang after Central Park and MOMA. As soon as I realized that Le Bernardin was within walking distance of Iridium that sealed the deal for Monday dinner before the Les Paul show.

Best Fast Food Chain?
I'm an In and Out fan. I like Steak And Shake too, but they are not fast food.
Of the Mex places I much prefer Barbacoa to Chipotle. The menus are virtually identical, but I like the flavors and portions size at Barbacoa.
Central Texas BBQ
I caught Chisholm Trail for lunch the last time I did a swing through Lockhart and Luling. I thought it was OK, with the variety of side dishes being the strong suit. IMNSHO the meats were not a par with Black's, Smitty's or Kreuz, and the lunch portions of meat were smallish.
Colorado Springs recommendations?
OK, I won't get you started on their fries.
My burgers were never greasy, were generously topped regardless of the variety, and were served piping hot with the cheese properly melted. And I've eaten a several different locations including Pueblo.
I'd go back anytime.
I-15 North - Salt Lake City to Idaho?
Best bet might be Maddox, near Brigham City. Uniquely Utahn, and the beef is as fresh as it gets. The restaurant is adjacent to the stockyard. I'm partial to the ground lamb steak. And raspberry butter... mmmmmm.

So glad to hear that JJ is back. Almost makes it worth a road trip in and of itself. Graze was always a fave. She's way ahead of the ABQ curve...
Best Albuquerque eats near I-25 Jefferson exit?
Chama River Brewing Co is by far your best bet. Excellent beers, broad menu that is pretty darned good, though I liked the food better before they changed the location from Blue Corn.
SLC Breakfast Recs
I was thinking Lamb's, but I will second the rooney recommended detour. If you do go that route, be sure to stop at Crumb Bros. and pick up some baked goodies for the road. Their palmiers are fabulous.
Late Night Albuquerque
I've never tried the cinnamon buns, so I guess I haven't missed anything.
The warm green chile salsa is good dumped on everything, and I am particularly fond of the tortilla soup with shredded chicken. Along with a
green chile cheeseburger (forget their name for it) and I am in ABQ cheap eats heaven.

I have yet to confirm with the man himself, but rumor has it that wunderchef Adam Kreisel will be heading up a kitchen specializing in risottos at Caputo's. Sounds like a match made in heaven. Solid company, first class ingredients and a new palette for the artist to tease our palates with. I can already sense having to let the belt out a notch...
Best buffets if we don't want to eat particularly fancy food!
Head for Planet Hollywood. I'm guessing the buffet is still the Spice Market. Not as frou frou as Bellagio, better overall quality IMNSHO. More of the "regular food" that you are looking for.
