I live in OC and have never been to Little Tokyo. I've heard the majority of Little Tokyo is now taken over by Koreans. Is the Japanese food there any good or not worth the visit compared to what I can get in OC? Thanks!

I'm looking for authentic Chao Tom (shrimp paste on sugarcane) and beef pho. Which Vietnamese restaurant in OC serves the best of these, preferably close to Irvine? Beef pho is a dime a dozen but I have yet to come across a restaurant with Chao Tom let alone authentic. Any suggestion? Thanks!

After you sliced it? I put it in the over at 300F and managed to get the crust nice and crispy but the porous soft texture in the core is gone. Any suggestions? Thanks!
