I really wish I could:
open a cajun seafood restaurant which would be run by me, a REAL cajun. None of this wanna be stuff. Also, I wish I could try some of the rarer scotches and single malts.
My "Go-to" dinner party dish:
Red Beans and Rice, Crawfish Etouffee, or Fried Seafood with my own batter fry.
