Yea I've heard that, maybe youre right.
Then again just because SOMEONE has been doing it doesn't mean it's common.
I don't know how common it's been in Mexican haute cuisine historically.
I could be wrong. I think they put it in there because it pushes up the check average.

Carne Asada may be good with merlot but is that authentic mex?
Sounds like more of a fusion invention to me.

Yes I do. Except for B.Jal which I haven't tried.
Go ahead and name the others I can always learn something.

Chipotle stays true to who thet claim to be.
Not Authentic mex but thats OK. Food with integrity healthy and tastes goood too.
Look at thier site.

If you like to cook, with a little time and effort YOU Dave could make far better and more authentic mex than these guys. I'm not being sarcastic.
Quality ingredients, knowledge, passion are absent at these places.

yes, yes and honestly I haven't tried B.Jal.
But if you say it's good I'll put it onmy list.
Hard to afford eating oput nowadays but I'll get to it.

That said, we have to compare apples to apples my friend.
Chipotle accomplishes what it sets out to do.
Makes good mexican-american food with the best possible ingredients it can use and still remain affordable.
It stays true to who it claims to be.
Food with integrity check out the website.
You can taste it too.

When we taste our food we gotta meditate on what were eating sometimes.
(chewing taco)
How does this meat taste?
Old? Frozen,defrosted,refrozen,defrosted?
Expired? US standard or select grade?
How's the tortilla? Too hard? Plastic texture?
Can you still taste some of the earthy "cornyness" in it?

A birrieria doesn't have much to do with chipotle if it's actually a birrieria.
That would be a place attempting to be AUTHENTIC mexican 1st of all.
Chipotle is NOT authentic mexican but that's ok they dont claim to be.
Also a birrieria sinks or swims on the strength of their BIRRIA above
all. Totally different concept.

So, how's the birria?

Do you like to cook yourself?
If so YOU could make better tasting and more authentic mexican food that all these places with a little practice. I am not being sarcastic either.

We can on and on if you're serious about this.

What are the top 5 panaderias in la county?

Yeah, I don't know about the starter. That's why I ask.
It's impossible to find a baking book that includes mexican breads.
So, I have'nt been able to research that.
Anyone else? best la panaderias?

And you wouldn't trust him because...?
Authentic can apply to anything antojos included.
if you could find it IN MEXICO, in a traditional setting
it might be authentic.
Watch Rick Bayless shows on pbs he goes over all this stuff.
if its Mexican American then call it that.
Otherwise... it's 2010 and there is STILL nothing
quality, authentically Mexican and consistent around here.
When I want Mex-American under 10 I go to Chipotle though.
Quality ingredients and pretty consistent food.

Anyone know if this place still exists?
It's 2010 and there's still no quality, authenticMexican food here for the common working people. Faustos is the only one I need to try.
Part of the reason I think is a lack of importance given to quality ingredients (think chipotle)
by Mexican restaurant owners. This is an unfortunate fact of the Mexican culture that I have observed. You say the word "organic" and they look at you crazy and/or laugh.

Just look at the tomatoes at some of the Mexican markets.... That's what they're working with.

Penn & Teller pre-show dinner

Eat at ping pang pong at the gold coast right across the street.
Hard to find good food in lv in the under 100 4 2 range but that should do it.
Service is ok-good.
Food is solid.

Wine list is not native to mexican cuisine.
look at the history it's just not, whether Bayless does it or not.

Beers, refrescos, aguas frecas from scratch, that's mexico.
Wine always feels forced to me.
It's not a question of refinement as much as of authenticity.

Making a great pastrami sandwich

Great to be able to look up random topics on this site and get info.
I just made me a sandwich with steamed pastrami on toasted whole grain with
stone ground mustard, mayo, and cornichons. It was pretty good.

Still have not found ONE good local Mex place.
I went to Espees on Durango because it got a good write up in citylife.
I've had better meals at Del taco for half the price.
The food tasted artificial and pre-made. Don't they know people can tell??
Even the guacamole was a pre-mix...The search continues..

People think this is such a great food town. If they only had to live here.
