Rib Roast
I generally try to avoid freezing beef because of the loss of fluids when thawed out. Having said that I bought a couple or Rib Roasts in March that had a really good sale price. Anyone have any suggestions on how to make up for the fluid loss? I'm thinking of maybe a marinade that's injected. I'm also going to use a charcoal grill. Thoughts or tips?

We had lunch at the Monument Cafe on Saturday. I thought the food was pretty good, I would definitely eat there again. One of the waiters saw the name of my son's High School on his T-shirt. Turns out his mother is one of the Administrators at the school, a small world as they say.

Hanger Steak
I have 2lbs of Hanger Steak that I'm planning on grilling tomorrow night. I'm looking for either a marinade or rub recipe for overnight marinating. I usually just rub with sea salt, garlic , black pepper and olive oil , but I want to try something different this time.

We are celebrating our 23rd wedding anniversary this weekend. The kids will staying with friends for the weekend. We are having dinner at York Street and are looking for somewhere to go after Dinner for cocktails. I like a nice cigar and cognac/bourbon with music afterwards. Any suggestions?
Matt Martinez Pan Fried Steak Recipe
Sometime in the early 90's the Dallas Morning News had a story with Matt Martinez on cooking steaks at home. I recall a light dusting of flour on the steak to mimic the crust created by the broilers used in Steakhouses. A pan sauce was made using Soy Sauce.
I lost the recipe some years ago and cannot find it on the internet. Does anyone else remember this or better yet still have the recipe>
