What type of cuisine do you NOT like?

thank you so much for your advice. as i said to phild above, i will have to figure out a way to peek into the kitchens!
btw, why do i never see whole grilled or baked fish at indian restaurants?

What type of cuisine do you NOT like?

thank you. around here it's mostly buffets and even the regular menu is all the stewed stuff and dried out tandooris. meat sauces over rice or sopped up with naan are fairly boring to me. you offered some interesting insights for me. i will start peeking into the kitchens!

What type of cuisine do you NOT like?

indian. i don't hate it. maybe i have not had really good examples of indian cooking. i love the rices and biriyanis and saag paneer, samosas and naan. but....most other dishes seem so similar to taste and texture and cooking style: mostly stewed in sauces. the meats are blended and melded into the sauces. and for me, the sauces all kind of taste similar. i've had the tandoori meats but they all seem to be overcooked and dry. i like the curries, but almost everything else seem to be cooked like a curry with different spices.

New PBS series: The Mind of a Chef

what's wrong with our pbs station, paul? they always show the shows at least 1 season late. but they spend hours showing kcts cooks. i remember going round and round with them on the kimchi chronicles. it took them a year later to finally show it.

Signs that someone is a GOOD cook

without ever stepping foot into their kitchen or tasting their food, i would guess a good cook by how she talks about food and proof that she actually cooks and how she talks of her love of cooking and eating it.
i.e.: i love the blah-blah at this restaurant because of how this ingredient made it taste like so, and how it is prepared makes it taste even more so.
i made the best blah-blah the other night by changing up this ingredient for that and took a hint from this famous chef's recipe and it ended up tasting like this.
etc. etc.

agreed. my mother was from japan. we lived in japan until i was 13 years old. ajinomoto was always on the table next to the s&p, togarashi and soy sauce. when we moved to the panama canal zone and finally to the mainland usa, ajinomoto was always on the table.

gmm,i lived in spokane for over 25 years until 2005. the first time i saw crab rangoon on the menu at a chinese restaurant, i wondered why there was a thai dish at a chinese restaurant....the cathay inn. :-))

well darn. i actually like the pu-pu platters, recognizing it for what it is. one place in spokane had a little hibatchi grill thingie for their pu-pu platter when you could grill up some chicken skewers. i cannot like the crab rangoon, no matter what.

maybe it's not about the hotdog. maybe it's about the sausage: bratwurst, polish, etc. etc.
maybe in the days and ways of bratwursts, mustard was the preferred condiment, and that preference has transferred to the the american style hotdogs which are, as we all know, nothing comparable to the bratwurst and polish sausages.

season 2, episodes 9 and forward, april bloom.
i made her clam chowder. i followed her verbal recipe from the show, since the one by bittman and april from NYTimes did not follow what was shown on the mind of a chef.
it was delicious. it was a "wow" dish.

Maybe Andrew Zimmern isn't so bad after all?

i love bourdain. but i have to disagree with you on bourdain's approach to foods he does not like. he may smile but then he will do the snarky voice-over later. at least zimmern will give his critique "to face", and i think, in a very respectful way. the durian thing is an on-going thing with him. it is one of the few things he cannot eat.

i think it is more the NE china cuisine that may not be executed well? i am not very familiar with the various chinese regional cuisines, so it is hard for me to say. there are not many chinese restaurants in the area that i like. szechuan garden is my favorite. i also like wonton noodle house and biang! i do realize that not all chinese cuisine is the highly seasoned and highly spiced as in szechuan or hunan which are my favorites. but i also like some basic cantonese.
have you been there, paulj? i would be interested in your take on Dumpling Generation. it would help me learn to appreciate the NE Chinese cuisine.

i was so excited that Dumpling Generation finally opened. i've been there 4 times and so far, nothing grabs me. even the dumplings are just ok for me. i'm really disappointed that i don't care for much there. they are really nice people but if there is a "rush" for dining in, take out and bubble tea service can slow down to a crawl since there is usually only one waitress and i think, one cook.

thought i'd resurrect this...
there is a"new" korean restaurant called New Seoul.
my korean friend discovered this place about 6 months ago and swears this is authentic and great tasting food. this place serves food that is not offered in most of the korean restaurants in this area. i think she goes there once a week now.
i had the sul lung tang and the broth was not as white and creamy and was more like the Traditional Beef Soup sul lung tang, but oh, the flavor! i highly recommend it.
