How many tablespoons of coffee....

I was taught that 2 tbsp. per EIGHT ounce cup is standard. But measurements shown on pots are for six ounce cups. So I always convert six oz to 8 oz and then multiply by 2. E.g., if I fill a pot to the "8 cup" mark, I know that it is equal to 6 8-oz cups, so use 12 tbsp (3/4 cup).

I have a new Breville food processor, as yet unused, that comes with a dough hook. I've been looking at recipes that give instructions for a stand mixer. How would I translate timing and speed from stand mixer instructions to food processor?

Another Passover question

I don't know how to calculate weight relative to shrinkage rates, e.g. if shrinkage rate is 30% or 50%, then what weight do I need? I understand Valerie to be saying yes, 1lb. per person, pre-cooked weight.

I will be serving 24-28 people. Large briskets run to 7 lbs. That would mean making four briskets!

Brisket Without Fat

In my experience over the years, butchers often tell you that you don't really want whatever it is they don't have. At WF, their brisket may be "butchered" off site and delivered to them with the fat already off, so they don't actually have the option of giving it to you untrimmed. It's also hard to find large pieces of brisket, again because it's often delivered to retail butchers already trimmed to a given size.

What is your biggest recipe pet peeve?

Loss of standardization of recipe terms:

1. "fresh breadcrumbs" used to mean crumbs from fresh bread rather than from dried or toasted bread; now it sometimes seems to mean "make your own" rather than store bought. So I'm no longer sure what to do when I see "fresh bread crumbs" in a recipe.

2. "1 cup pitted olives" clearly means a cupful of pitted olives.
"1 cup olives, pitted" sounds to me like it could either mean the same thing, or could mean measure 1 cup of olives and then pit them.

The latter I'll guess at in the context of amounts for other ingredients in a recipe. But the breadcrumbs business stumps me.

Kraft used to sell packaged (7" x 4"?) meunster cheese with carroway seeds - the cheese was firm and thinly sliced - a perfect flavor combo. Wonder why they gave it up.
