Cooking venison steaks, want to deglaze and make a pan sauce. Thinking of deglazing w/sherry then adding some Dijon mustard & capers. I know berries are traditional and juniper (which I don't have). Any others?

A lot of ra-ra for Negroni's but I find they can be awfully strong to drink in a business situation. Particularly in a bartenders hands who doesn't make them often. What's wrong with Campari & soda? Hope the bartender throws in a lime slice (don't want to have to ask) and it's light and easy to sip and conduct business. I've drank them for 20 years since bartending in Europe & the mid-east. Is it too pink? Only if you're insecure enough to think so. And if you need image it's very European.

Chinese Roast Duck (Vit Quay)

The duck I had was like the Pei Pa Duck. Less meaty, more cooked down and carmely. I wound up eating it along side some noodles I cooked up and tossed with chui chow (?) sauce and peanut oil + some bean sprouts. It was very good. Thanks for the feedback all.

Thanks everyone. The shop it's from is a Chinese Bar-B-Que with duck & roast pig hanging on hooks. "Vit Quay" is on the menu board there. They have flattened and round (whole) roast duck there. What's the difference?

What's the best thing to put ketchup on?

I'm not going through 200+ responses but I can tell you it's great on fried matzoh & eggs. Mix in a bit of Tabasco and you're good to go. And give me Heinz ketchup every time.

Chinese Roast Duck (Vit Quay)

I just had a customer give me a pound of roast pork and a whole, flattened roast duck. We ate the pork immediately with the dipping sauce (wonderful) but I'm wondering what to do with the roast duck (vit quay)? Is it Chinese or Vietnamese? It has a fair amount of meat but more bones and great carmelization. How or what kind of dish should I incorporate it into or how should I serve it?

Thanks all. I do have proper storage conditions so laying down the bottles won't be a problem. I think the SGN's would probably be a bit too expensive but I'll look into that. I also would want to taste any Burgundies I would consider laying down ahead of time. It appears that the 30-50 year Bordeaux wines are all in the $150 and up range. I may just have to splash out and pick up a bottle of the 09' Lynch Bages, more for me than my little girl. (-: Hopefully I'll be able to cultivate a love of wine in her so that we can enjoy it together over a fine meal. I'll probably have to wait a year or two to pick up the Piedmont & the vintage port and I think I'll either get a Spatlese or an Auslese as far as the Germans go. Thanks again for all the feedback.

A week eating BBQ around IHOP, Kansas City, MO

2 strikes on Guy Fieri & DDD. I visited Smokin' Guns yesterday for an early (4 PM) dinner. They might have won awards in 1999 but they had nothing going on yesterday afternoon. Ordered the Combo Platter with ribs, burnt ends & brisket. Was told if I wanted the burnt ends they counted as two meats so I ordered the brisket on the side. They brought my food out promptly and none of the meats tasted like they had been seasoned at all. Ribs had good texture but simply tasted like pork. Burnt ends were tender but no carmelization and no crispness at all. The brisket tasted like it had been barely re-heated in the microwave. Cold around the edges. The sweet potato fries were obviously leftover from lunch. The slaw had way to much celery seed. This is the second time I've tried a DDD recommendation and both have sucked (the other was in Omaha). Does Guy get special treatment? Perhaps. PS, the "hot" sauce was more sweet than hot. The original sauce was better. I had read that folks had a hard time finding the place. It's easy if you take 35 N to 16th St. and go west to Swift then south. My question is why bother? I'd say give Smokin' Guns a pass and go to OK Joes for your burnt and and all. Far better. 3 out of 10 on my Bar-b-que scale.

Dogs in Restaurants

Wow. I see my first comment about dogs in restaurants has been cut. Guess the hard reality is too tough to face. Such a 1st World luxury to be able to feed your pet more in a week than the average Indonesian family can afford to eat in a month. Personally I find dogs in restaurants far more offensive than lighting up a fine cigar at the end of a nice meal.

Top Chef Texas - Ep. #15 - 02/15/12 (Spoilers)

Glad to see most of the culinary world thought Top Chef TEXAS was stupid cooking on a gondola in British Columbia. As I posted on Twitter, why not have the chefs slicing sashimi whilst bull riding. Perhaps making crepes while trying to hop a moving train? How about juggling cast-iron skillets while making cornbread?

Birth Year Wines

My daughter was born in 2009 and I'm looking to lay down a few bottles of wine for her 21st birthday (March 2030). Looking for recommendations not costing more than $100/btl.. I'm thinking a Bordeaux, a German Riesling, a Nebbiolo from Piedmont and/or a vintage port. Any thoughts?

Cooking for 2 on a budget?

One other idea from the healthier side is using soy crumbles. You can add them to a chili or pasta sauce in place of ground beef and make meal much healthier. Anywhere you would use ground you can use the crumbles. They'll take on the flavor of any seasonings.

Where to eat in America?

No place is more Iowa than "The Machine Shed". Along I-80 in Davenport (Bettendorf?) & Des Moines, Hickman Ave. exit. Had my first Iowa meal there 10 years ago and when comfort food is needed no place is better. Think pork.

Specialty food shopping in Des Moines

The Cheese Shop on 42nd in the Roosevelt Plaza has both great cheeses and a selection of olives. Graziano's is the local sausage and it's just straight forward Italian sausage. Nothing to write home about. Don't know anything about panetonne molds but try Kitchen Collage in the East Village.
