I spent a week tracking down ingredients and then making the classic brown stock from Jacques Pépin's Complete Techniques (for a city that's all about beef, I had a hard time finding veal bones in Omaha).
I already made scalloped potatoes that used stock instead of cream and they were incredibly meaty and full-bodied.
Risotto is next on the list.
What other recipes will showcase the stock? (I do not want to do consommé!)

I love my Technivorm!
Fill it with filtered water, some fresh-ground beans (I have a KitchenAid burr grinder -- great for drip coffee & press pot grinds) and watch the coffee goodness come out. We use a SwissGold filter instead of paper; the metal filter allows more oils to flow through. And the thermal carafe means no more baked coffee.

What to do with candied ginger
I've diced candied ginger and mixed the pieces into muffin batter and pancakes--sprinkle them into the batter after you've poured the pancake on the pan.
You can also infuse vodka. Squeeze half a cup of chopped candied ginger into a bottle of vodka let it sit in the freezer for a few days.
