Carbon vs. Stainless Steel Fry Pans

I am at a loss when people state that they can't cook certain foods in SS pans - at the proper heat they are tops for cooking. Just preheat.

I can confirm this.
And as for polishing the cast iron you could and it will work just fine. Or you don't have to it will gunk up and work fine also .

Most of the sprays use corn oil
corn oil = no no with any cookware . Just google it

Never use spray. It will gunk up a pan sooner or latter. Use some oil ( I use canola )spread it around with a paper towel - then discard the paper towel or use it for a spoon rest . This has served me well for many years.

Non-stick frying pan suggestion?

The best NON STICK cookware I have found bar none is Macy's Anolon Advanced.

It it heavy duty and uses the best Teflon Coating available (Autograph ) it surpasses my Swiss Diamond / Scanpan / and Calphalon .
Plus it can be found on sale many times at half the cost. But even if I could not get it at a reduced price it is worth the price as marked anytime.

Nonstick vs. Stainless Steel

Number one if your pan is so hot as to melt Teflon you have more problems that the hot Teflon going on. Even butter at that temp will give off noxious fumes.

But as to Stainless steel pans put a pinch of salt in the pan bring to heat then wipe the pan with a paper towel with a dab of oil on it. You will have less sticking problems .

"Super" microwave ovens -- 1300 watts?

I have an 1100 watt model that replaced a 900 watt model and if they had a 1300 watt model when I bought that I would have got that.
IMO more is better with microwave ovens.
