Pork Rillettes: Les Halles Recipe

Hello all-

I am taking the plunge tomorrow, and making pork rillettes. I am following the recipe from the Les Halles cookbook.

Anyone tried this recipe? Pointers?

It seems fairly basic: Chop the meat, season it, and slow cook it in water.

I'd love any input- I love the dish, but have never made it before.

Ex-Texan: Tony's BBQ- Baked Corn?

Hey gang-

I have lived in Texas off and on my whole life. Most recently, I lived in Beaumont TX for a couple years.

While there, I fell madly in love with Tony's BBQ- and especially their "Baked Corn" with studs of ham, and jalapeno.

By any chance, does any Chowhound have a recipe or a hack to make this?

My office ordered sandwich trays from Max's recently. Normally, my hatred for sandwich trays is legendary, but these were GOOD. I mean, really, really good.

I haven't been to the shop yet, but their mass produced sandwiches were awesome.

El Mercado in Hoover has very reasonably priced rabbit. Also they make terrific roasted goat. Their bakery is MARVELOUS.

Howdy all-

I am looking to replace my depleted stores!

Where do y'all shop? I am looking for a butcher that can help me with veal bones, pork belly (which I have been surprised to NOT find at the grocery) and duck.

Any ideas?

So far, the Vietnamese market on Green Springs and the Asian market on 31 (just north of 459) are the only places I've found for some of the stuff I use a lot- but I'm all but out of stock, and need to make more!
