Good places in Banff, Lake Louise, Jasper, Savona, Revelstoke, Calvary?

We are soon leaving for a three week trip to Auckland and South Island and have read postings with great interest. However---things are different in "winter"!!!! Does anyone have knowledge of food/wine/dining things to do when it is cold, rainy, snowy?
