Vegas for vegetarians

My SO and I were in Las Vegas last March and are headed there again this April. He is a vegetarian and really, really, really LOVED the buffet at Wynn. It has tons of options for vegetarians and for non-vegetarians. We are definitely going again this year...I can't wait! It is a bit pricey but totally worth every penny.
