Top Chef Texas - Ep. #11 - 01/18/12 (Spoilers)

grilling halibut and then putting it in a saute pan with butter is the culinary equivalent of braising a really nice piece of filet in red wine...
stupid and pointless...
both proteins are so lean that they will inevitably be dry and over-cooked regardless of Bev's cooking abilities.

Top Chef Texas - Ep. #11 - 01/18/12 (Spoilers)

I really hope that lindsay noticed how well cooked bev's halibut was......stupid cranky bossy......

I see that sarah has very aptly put on heather's shoes as the condescending nag of the house...

Where can I find a cheap pasta maker in Vancouver/Richmond :) ! price range of 15-20$

sometimes you can luck out with some house wares at places like army and navy or even the salvation army if you want a vintage one

"We can't be friends..."

I think however, worse than the cheapo friend is the "friend" who comments on how you are over tipping.... Not your money...take a hike!

Top five gourmet sandwiches in Vancouver?

I can't believe no one has mentioned la grotta del fromaagio..my favourite sandwich of all time

Chambar Thoughts:

I'm sorry..while I have my own issues with Chambar's service (though i LOVE the somm since his bluewater days) it is wholly unreasonable for people simply to EXPECT something for free just because it's a birthday. First of all, why would a restaurant force feed you dessert you've already declined that you will not enjoy because you either didn't pick it, or too full. And while yes, 180 isn't cheap for two, it's also really...not that far away fm the avg bill at a semi fine dining restaurant.

Chopped

I love how chopped masters donates it's prizes to charity...I think it's such a fantastic premise...plus its fun!

Recommended Venues for Private lunch, 12-15 people, downtown Vancouver?

Hapa Umi, they still have the old private room of metro where you can use the projection screen, Hy's handles projections all the time and can do set menus at almost any price, if you are looking to do a little bit less expensive try Milestone's in yaletown?

Food Trucks and Must Haves

definitely give japadog a try and a food court in richmond!

Single... still eat dinner out? Tips?

I love eating out alone, especially after a long day or week of feeding everyone else. Sometimes I bring a book but I find if you don't, you may get an opportunity to meet someone new! As a bartender though, I do find that women eating alone get more stares then men, who seem to do it all the time ( I am of the female variety). That being said, single diners are often the most generous as they have no one influencing how much they tip, and their bills tend to be nice and hefty.

annoying food bloggers

First of all, I'm good at my job. I know that, people who aren't do not sustain themselves in this industry because really, the eight dollars an hour isn't going to justify me ignoring the other career options I have which come with my degree. That being said, I'm fairly certain if a server knows they are serving a table of food bloggers they will bend over backwards because let's face it, no one likes to be made an a** on the WWW.

annoying food bloggers

No not at all..there is nothing WORSE than keeping silent when something is wrong. We are in the business to please..that's what we do..how can we do that if you tell us everything is ok when it's not?? if you don't speak out if something is seriously wrong with your food, or even if it's not what you expected...I think it is unfair that you rate anything as poor...especially the service...servers..like men...are by no means mind readers. (Mind you..if you order sth completely against a server's recommendation or a filet steak extra well done and complain that it's tough..wellll....restaurants don't work miracles either....) all these blogs I'm referring to are local..(i.e. vancouver british columbia) and most are done by younger, inexperienced bloggers which, I give much thought to reading anyways...however..I have heard through the grapevine that certain very popular food blogs in this city tip somewhere in the 10-12% range consistently...and I'm fairly certain they get taken care of.....
so...

State of Vancouver Food Blogs 2011 – The actual post…

I think it's insulting to the general public that KimHo thinks that we will take whatever bloggers say at full value. Does he really think we are so stupid to not take things with a grain of salt when it is FULLY disclosed that the bloggers are benefiting either directly or indirectly from a positive post? I have worked in the restaurant business for over ten years and I will be the FIRST to admit that we will do whatever we can do have people come through our doors, and come back again. Would Kim consider it "selling out" if sth were wrong with his meal and it was comped?? Where do you think concierge recommendations come from? It's because restaurants shell out thousands of dollars a year to take care of them...so that they consequently take care of us. Either Kim is really naive, or really idealistic or just a full on id***.

annoying food bloggers

I couldn't actually. I found her comment on another bloggers site with no link. I guess, although most of the public doesn't view it as such, considered legitimate journalism...but the internet definitely allows more room to be anonymous. My only real irk about this particular posting is the fact that the problems with her experience could have so easily been rectified. I suppose that is a bit of professional naivety on my part...wanting every guest who walks through the door to have an enjoyable experience.

annoying food bloggers

I ask because recently, I had something blogged about me! Somewhere along the lines of the service wasn't great because the server recommended a sake...and brought us a more expensive sake than the one we liked...
my question is a) why didn't you tell me which sake you like?
b) why didn't you tell me this was NOT the one you liked?
c) why did you drink it all...

these are all valid questions don't you think? the passive aggressive-ness of her response was rather irksome.

annoying food bloggers

as much as I LOVE following my local food blogs...recently I've found myself increasingly annoyed. Having worked in hospitality for about ten years..I am constantly appalled at how quickly food bloggers make assessments without any real knowledge about food..itself! The most irksome thing is when they complain about the service, or how something is not done to their liking but really..how is anyone supposed to rectify the situation if the service staff is never made aware?? Furthermore..if I read ONE more blog about some blogger who makes a huge fuss and leaves a LESS than acceptable tip (we're talking 10%ish) I WILL SCREAM. Thoughts?

Downtown Vancouver restaurant with dance floor?

Chambar...served with brioche if I recall....delishhhhh and well priced

Hapa Umi

Any intel on the newly opened Hapa Umi in coal harbour?

Kingyo

kingyo is my FAVOURITE izakaya the quality I find is above and beyond the guu's and gyoza king. My favourite things to eat are (and I have eaten everything several times over) scallop carpaccio, the sizzling beef tongue...negitoro sushi is amazing, tako wasabi and calamari.

Reasonable lunch with a view - Is it possible?

sandbar and bridges are both fairly reasonable for lunch and amazing views

Top Chef All Stars Predictions

does anyone else think it's not really a contest without Bryan V??

Friday Happy Hour?

legally the liquor board does not allow restaurants to discount alcohol unless it is an all day special. Cardero's and Sandbar do a mussels and pints feature everyday mon-fri for 10 bucks!

Which previous TC winners would be competitive in TC All Stars?

Bryan Voltaggio for the win!

where to catch the canucks?

Any good bars to go to where the food is relatively decent, well priced, with big tv's?

Sorry To Use Language Like This Here

my chef has a recipe in it! =) and the cover looks very much like the bluewater recipe book

Pourhouse restaurant/pub

hy's, keg, gotham, and joe fortes are all really meat friendly, very approachable places nearby

Any feedback on seafood tower at Blue Water Cafe?

it is a portion between two. I think it is insane to compare Coast to BLWC. One is a glowbal group restaurant whose main allure is to see and be seen, whereas Frank Pabst at Bluewater has won chef of the year several years running..? It would be akin to trying to compare going to Earl's or DB for a burger.....both restaurants will HAVE them it just depends on how you'd like to spend your money!

Any feedback on seafood tower at Blue Water Cafe?

kingyo does a lunch menu now as well and it is just as impressive as their dinner. Go early though they have really limited quantities of their specials.
