Sally Schneider's "A New Way to Cook"--Flavor Catalysts?
I realize this is an old (and long!) thread. It might have been mentioned in the second half (got tired of reading posts!) but I must recommend the pan smoked fish. I did the salmon and it is SO easy, so simple and so good. I did ruin my cheap wok though. I think it will be my smoking pan from now on. I used the chipotle pepper for smoking and it worked great.
I also make her version of french toast a LOT.
I also make the slow roasted tomatoes all the time. They are soooo good with cheese and crackers for a snack or light lunch.
I made the "Fried" Artichokes with crispy garlic and sage once. It was excellent. We ate them up quick.
Pan Seared Crusted Fillets are easy, fast and yummy.
Basic Pizza dough is good and I froze several rolled out doughs(?) to use later and they worked just fine.
I bought some lapsang souchong tea that she uses in a lot of her essences for smokiness. It's a cool way to get a smoky flavor into things.
I love this book, and I love that it is huge. I have made the above recipes, but every time I pick this book up again I see so many more that I want to try. There are some really great techniques too.

DALLAS! Good Breakfast Place Downtown near Parade on Saturday?
Hello,
Does anyone have a good recommendation for a place to go for breakfast before the Christmas parade on Saturday? We will be walking from Akard Station toward the parade so it could be anywhere between Pacific and City Hall north and south and Lamar and Harwood east and west. We will have a toddler too. It doesn't have to be fantastic food, but warm, not just pastries. We will probably be there at 8am.

Dallas Late Night Spots
I ALWAYS order build your own crepes with spinach at Cafe Brazil (for the last 10 years), but I usually get it with chicken which is always really dry and flavorless. Not sure why I keep adding chicken, I won't next time. Maybe it's the location - Deep Ellum, Central and Oak Cliff. That being said, all of the food that I tasted at Buzzbrews on my single visit was very good except for the wack french toast/not french toast. The crepes were super tender and delicate, a lot better than CB's in my opinion.

Also, Smoke/Belmont Hotel is not really near Bishop Arts. It IS in Oak Cliff, but it is way over on Fort Worth Ave and Sylvan. If you take Commerce from downtown it will turn into Forth Worth Ave and Belmont will be on your right. GREAT patio with downtown views.
Eats in Bishop Arts (Dal)
If you want to stroll around Bishop Arts - and I would recommend it - then you should choose Hattie's, Eno's, Tillman's or Veracruz. There are some great shops. If you like sodas you should stop by the Soda Gallery.
Hattie's is great - semi fancy, excellent food and excellent specialty martinis.
Eno's is fun and casual and the food is excellent too. Local ingredients, super-thin crust. They also have fantastic salads and a gigantic beer menu. I don't think it is overly expensive and I find the pizza to be plenty filling.
I like Veracruz. Interesting food.
Tillman's Roadhouse is great, but I would probably pick Hattie's or Eno's ahead of Tillman's.
If you don't care about strolling around Bishop Arts then Bolsa and Kavala to the west on Davis are wonderful. Bolsa has a huge outdoor covered patio. Bolsa also uses super fresh ingredients - no fryers or freezers there.
To the east on Davis there is a new place called Hula Hotties cafe. I haven't been, but it is supposed to be wonderful. It is headed by a former pastry chef who worked in a resort in Hawaii and has great bakery stuff along with unusual entrees.
If you want to go for drinks somewhere afterwards, I recommend The Quinn which is east on Davis from Bishop Arts. It's just a bar, but they play great music and sometimes have live music.

Mexican Food in Dallas Metroplex
Come down south to Oak Cliff or Cedar Hill and try Veracruz Cafe. It is not SoCal, but it is definitely not Tex Mex. It is described as Mesoamerican, Mayan, Huasteco & Aztec Cuisine. Lots of seafood dishes.
La Calle Doce has a lot of seafood dishes and I would not consider them standard Tex Mex either.
Stay away from most chains, they are definitely, usually BAD and DUMB Tex Mex. You must be going to some really awful ones if all they offer on their enchiladas is chile con carne and flour tortillas. Flour tortillas usually only come with some versions of enchiladas suizas - chicken enchiladas with green sauce. Enchiladas around here are made with corn tortillas 99% of the time, and if they are not, it usually tells you on the menu. MOST Tex Mex places offer at least chile con carne, queso, sour cream sauce, ranchero sauce - the blah ones. Many others offer different versions of chile sauces, tomatillo sauces (my favorite). You don't see a lot of the traditional red enchilada sauce you talk about. I like that sometimes too.
Look around on Guidelive.com too. I doubt you will find exactly what you are looking for. You will have to reserve it for visits back to SoCal and savor it when you are there. Hopefully you will be able to find something you like here in Texas.

I'm so glad I watched it for the hot milk for gravy tip. Maybe now I can make some non-lumpy gravy now.

OPEN 24 HOURS!!! This place is SO GOOD any time of day. Definitely a genuine dive, in business for 20 years with excellent "experienced" waitresses. Their salsa is fresh and sooooo good. IT IS A GREASY SPOON, SO IF YOU ARE PRISSY YOU SHOULD STAY AWAY.

I also love Buzzbrews. It is almost identical to Cafe Brazil as far as the way it is set up, BUT the food is 1000 times better. Sorry Cafe Brazil! Get an order of the honey wheat toast - I think that's what it was called - GREAT. I had the French Connection crepes and I finished all of it - I usually don't finish ANY plate of food. I did not like the griddle toast though - their version of french toast. I like french toast.
Texas Chicken Fried Steak
WOW! Schubert's in Giddings, what a blast from the past. I'm from there and my Dad used to take me there when I was little for the chicken fried steak since it was my favorite dish.
I can't say I can recommend anywhere in Dallas - I don't eat CFS that much but always WANT to! (try to be virtuous)
A few years ago there was an article in the Dallas Morning News about how to cook CFS the right way and Ginnie from Ginnie's Bishop Grill (RIP) was featured. I can't find it online though.
I don't really care for the CFS you see most often now - giant crunchy breading with a dried up crunchy piece of meat floating detached in the center of the breading with a plop of gloppy package gravy on top. I think the breading should be dense and stick to the meat - hopefully well tenderized.
I am DYING to try the CFS at Youngblood's Stockyard Cafe in Amarillo ever since I saw how it was prepared on Man Vs. Food. Luckily my brother in law lives there and we will visit soon.
I bet the CFS at Bubba's would be worth a try. Their chicken is excellent.
I haven't had it in years, and don't really remember, but the CFS at Sodolak's in Somerville would be worth a try - of course it will be GIGANTIC. If that's not good at least you can get some chicken fried bacon!

Nasher Sculpture Garden and their cafe is a GREAT idea.
On the other end of downtown I would recommend Izmir for a great and affordable lunch. Mediterranean. I recommend their super smooth hummus and their delicious Russian Chicken Salad. I'm not sure if the downtown location is there anymore though?
Definitely ask the Concierge too.
You might look at www.guidelive.com which has a restaurant listing for Dallas and surrounding areas. It's a bit overwhelmind, and it used to be a LOT better, but you could narrow it down.
Good luck! Definitely visit the "Ball" on top of the tower if for the views alone. If you do get a chance I second the idea of visiting 560 which is up there. You can order appetizers at the bar if you don't want to shell out the money for their nice dinner.
Oh yeah, Smoke at the Belmont would be great too - or Bolsa or you can take your pick of almost any place in the Bishop Arts District if you want to take a cab down there. Bishop Arts would be a great place to have lunch and stroll around for a little while.

PLEASE add Smokey Joe's! I saw one post at the very beginning about it. It is a pork place. It is a tiny renovated old style filling station - takeout only. It's pretty much a smoke pit with a door. I love their ribs - tender and flavorful - you eat them and there is nothing left but a skinny little bone.
Go south on 35 from Dallas and look for it on the west side of the highway - it faces it. It's a tiny white bldg with red trim and smoke coming out of the top. Between Ledbetter and Camp Wisdom.

eLizard - that's exactly what I got - for $1 so I figured it was worth a try!
I grated some in some sauteed garlic - bleh. I was very underwhelmed with their fragrance and flavor, but for $1 I guess I can't complain.

What to do with a jar of black truffles?
I have a jar of black truffles that I found on sale at Marshall's (!) I have never, ever cooked with truffles, but I like the flavor. Any suggestions?
