I've never seen conch available in any supermarkets here in Calgary. But I've never specifically looked for it either. I surmise that I'm not going to find it at Safeway or Co-op, but has anyone seen it other places? T&T perhaps?

Why would anyone want to buy hummus when it's SO easy to make, so affordable, and can be done with endless varieties.
Incidentally, has anyone ever reverse engineered Tribe brand "Mediterranean Spice" hummus? I'd love to be able to make that stuff.

Guasacaca in Calgary?
Dear brilliant Chowhounders: My sister made several batches of hummus, one with what she called guasacaca. She instructed me that this is the spice she put into it, and that she bought it at a Brazilian store--but in Edmonton. However, Googling that word suggests to me that this is actually an avocado salsa. Is there such a thing as guasacaca spice? Or mix? Or something? Can this be found somewhere in Calgary?

I'm making stock from the turkey carcass from Christmas. Once I'm done with the carcass, can I reduce the stock by keeping it on the burner for a couple of hours so as to take up less room in the freezer?
What is the purpose of flambé?
Of course, the answer I have heard is, "to burn off the alcohol." Why is this a good thing?

Whenever I go to the Asian supermarket, I try to bring home something I have no idea what to do with. I'll eat anything once.

Did this. Kinda. I like cabbage lightly sauteed in butter, then sour cream and ground pepper stirred in. Lightly fried some onion and celery first, then did this, and topped it with my eel. Interesting! I'd eat it again. I'd like to try some of the other flavors of canned eel.

I used to buy this at Balogh Deli at the Westbrook Mall. Balogh has since moved (or shut down entirely?) and I don't know where to buy it.

Wings in Calgary
I venture to a few locales for wings.
Limerick's on Macleod Tr has 17¢ wings on Mondays and are tasty. Shillelagh's on Sirocco Dr has 19¢ wings on Wednesdays, and have some great and unique flavours including a fantastic parmesan. I'll second the vote for Regal Beagle's salt n pepper wings. That said, they're breaded and I prefer mine au naturale.
