Best street food city in the US (other than NYC)?

A lot of what goes on in Portland is what I would consider fusion cooking. There are a lot of places that will take what is traditionally an Asian ingredient and use it in a different way. Korean tacos come to mind.

Cutting Sambucca with water............

If you put water in Sambuca it will get cloudy. I am guessing it is just sugar crystals.

I will no longer use Sriracha. It is far too trendy. From now on I will only use hot sauce prepared from locally sourced organic peppers hand picked by union labor.

Online Menus...How often should they be updated?

If a restaurant frequently changes their menu based what seasonal availability of ingredients I have no problem with them leaving up a sample menu. I do think that it should be update quarterly though so that potential diners can get an idea for each season.

Sriracha is so over. I was using sriracha 40 years ago on a dish that isn't prepared anymore in a restaurant that you have probably never heard of.

Now I only use hot sauce made from organic locally sourced peppers picked by farm laborers who are represented by a union.

If I am eating a burger that will obviously create an incredible mess I will eat it with a knife and a fork. Same goes for pizza.

There is a place in Seattle called The Northlake Tavern. Good luck picking up their pizza and eating it.

The nitrites only really help the meat keep its color when cooked. You can have a perfectly good ham without them. People did it for thousands of years before pink salt came around.

When Will Chefs Be Honest About Smoking Weed?

I don't think you could walk into a restaurant in Seattle in order a weed brownie. There are some pretty tight regulations on selling and I don't know that there is any license for on site consumption.

But...I do know that people are doing dinner parties in private residences where there may be an amuse-bouche that includes a hash oil to stimulate the appetite.
