I think that the tell tale sign of a bar that takes beer seriously is the glassware. If I walk into a bar and they have several different shapes of glass that can be employed depending on the specific beer you choose then I know that they have a pretty good idea.

When I was bartending, many years ago, we had a guy come out once a week and clean the lines. This was paid for by the beer distributors. It was in their best interest for our draft lines to be clean.

I hear you and I do feel your pain. There is nothing worse than a bartender with an outstanding tap selection who can't tell you the difference between a Black Butte Porter and a Old Rasputin Imperial Stout. They're both really dark right?

If I am new to a spot I like to throw them a softball to see if they have some basic knowledge before going to deep.

When talking about the actual bean, or ground bean in your case, espresso describes the roast of the bean. At Starbucks, for example, they use their espresso roast to make espresso drinks. But, you can use espresso roast beans to make a fine cup of coffee if you prefer a darker roast.

I am the same way with oysters. I love an Olympia or Kumamoto oyster on the half shell with a touch of horseradish and a squeeze of lemon. I will not go near cooked oysters.

Soy Sauce: Dark vs. Light

I guess I wouldn't have much issue if it were just Chinese or Japanese. My real concern is "Pan-Asian" where there could be any number of influences coming from any number of cuisines. But, if I read the above correctly I should assume that they are referring to Chinese light and dark soy sauces as Japanese soy sauce would be named differently.

So if I am looking at a recipe and it calls for dark, or light, soy sauce you are saying that I need to figure out if the recipe is closer to Chinese or Japanese cuisine? I knew there was a reason I hadn't done more Asian cooking before now.

Some may say it is better because it breaks the monotony of the dome lidded chicken and gets the family sitting around the table eating a meal together; and actually enjoying it.

If KFC became the default option I would concede that it is not the "better" option. But for a one off meal there is no shame in it.

Heinous KFC commercial

Is this really worth getting all frothed up over? It was a television commercial for a fast food restaurant. There was no claim that KFC will cure cancer or make you run faster.
