Stand mixer - worth having?

Get the biggest KA stand mixer you can afford and be done with it. You will never look back.

Another restaurant wine pricing rant!

When I worked for Marriott our corporate offices budgeted for a 25% pour cost one liquor, beer, and wine. This wasn't a difficult thing to do for liquor and draft beer. Wine was a bit more tricky.

At our location we charged a much higher mark up for the lower end and glass wines. Then the premium bottles were sold at between 150-200 percent of cost.

I imagine that Fig & Olive has a similar policy in their main office then lets each location figure out how they are going to achieve that end. Consequently, you see the lower end bottles going for much more than you would expect when compared to retail.

Another restaurant wine pricing rant!

I just went and looked at the Fig & Olive website. Looks like a pretty nice restaurant to me.

Have you ever used a Pressure Cooker?

I do beans in an electric pressure cooker with some regularity. I also do beef short ribs from time to time. This is the recipe I use:

I'm sure that as the weather gets cooler heading into Fall it will get more use.

I don't have a problem with any of those posts. I thought the squid ink was a little silly but whatever...

Eating Outside the Bubble

When I moved to the Salem area I made a point to frequent the taquerias and grocers around town. I haven't looked back.

PIZZA: Experts rank the top 101 pies to find the 'perfect slice'

Four of the top eight are in AZ or CA.

It's good to see PDX represented at #14. I have never been to Apizza Scholls but have always wanted to go. I should just do it already.

Why does the same restaurant show up at both 45 and 74. Pie so nice it's listed twice perhaps? Also #s 30 and 88. Great editing guys.

Gluten-Free Is the New Normal

Typically when people discuss a dramatic weight loss as a result of going gluten free it's less of a result of cutting out gluten but more a result of an overall healthier diet. No cake, no pie, no cookies, no beer, no bread, no pasta, no flour tortillas...more greens, more beans, more protein, more vegetables.

I obviously don't know you and don't know your specific situation but I would be shocked if your situation was any different.

Sadness

But, but, but...corporations.

What "typical American Foods" would you serve to foreigners?

I need to go get one now.

This place does pork with lettuce, tomato, and a creamy curry sauce. I bet they would leave the curry out if that isn't your thing.

How I Wrote an Entire Book on Banh Mi

How much would you use in a typical recipe? It is something that you add to flour...right? It is not a flour replacement IIRC.

In Mt. Angel, Oregon, about an hour South of PDX, there is a German restaurant that does a schnitzel sandwich that is a good stand in.

Chowhound now allowing advertising posts?

I tried to find the thread but it appears to have been deleted.

Anyway...longtime chowhound poster starts a post about pasta rocks and how ridiculous of a concept they are. Representative from Pasta Rocks chimes in defending her product and is tarred and feathered then paraded through town as a clown. The whole thing was pretty comical.

How many exceptions are there? Chefj just told me that the banh mi thread was an exception and now you are telling me the Indian girl is THE exception.

If they're all exceptions then isn't there really no rule?

At some point the sun will explode killing life on Earth so it is really all pretty inconsequential. Just something to think about it.

I had not seen the rogue traveling tuna salesman. That is clearly out of bounds...but a bit comical.

There was an "ad" over on the LA board where a young lady had started a business teaching people how to make Indian food. Now, I'm not in LA but I have always wanted to make Indian food at home. If she were in my area I would totally hit her up. I thought the post was appropriate and well placed but some people absolutely lost their minds over it. Really? If you don't like it just move on.

I think the banh mi thread that you have been so active in is a pretty quality discussion. Ms. Nguyen was not able to post that sort of content under the old rules. I'd say its a marked improvement.

There are enough people who don't give a rip about the changes that any loss of content will be inconsequential.
