Disappointment at Chez Henri
There is no roux in a traditional bouillabaise. Perhaps you are confusing roux with aioli.
Bourdain - Boston show -- discuss
CocoDan, You took the words out of my mouth. My GF and I are both Boston restaurant-industry veterans and fans of Mr. Bourdain's work. During and post-show, we both shook our heads in dismay. Oh well, you win some and lose some.
New chef and menu at the Independent
Marc Cina is a total BADASS cook. It's certainly great news that the Independent has appointed him as their new chef.

Annoyed at Grafton St.
The server and/or management did not volunteer to comp any part of your meal whatsoever? That's unfortunate and pure hackery on their part. If they had any sort of backbone of integrity they would've comped your entire meal. What's the message they send by not extending gratitude towards patrons such as yourself? Are they assuming that you should perhaps feel flattered to be a backdrop for an entertainment production? I'm sorry that this happened to you...what a joke.

That sounds like an amazing dish. It sounds similar to the suckling pig that we've enjoyed at Troquet throughout the years.
What should I order at Temple Bar?
There are many very good items to try from the menu at Temple. I recently had the flash-cooked oysters with tobiko, the hot and sour asparagus soup with tiger shrimp, the hanger steak frites with lavender aioli...and also...oh yeah, the caeser salad, though pedestrian or whatever, is one of the best around. Desserts are swell too, I can't remember exactly what we had (I like to drink) besides a perfect creme brulee.
