A Moritaka 360 Sujihiki knife. Super sharp and long.

They are solid wood with magnets inside. I got them at Knifewear in Calgary, Canada http://knifewear.com/index.asp. Not on the Web Site but you could contact them. Mine are were the darkest they had and they can be much lighter. No idea of the type of wood.

I am not saying that the BGE have problems in a cold climate or not, but if you are concerned, you may consider a Big Steel Keg (Bubba Keg) if you like that style of pit.

You are correct - the meat should not fall off the bone in competition ribs. The Kansas City BBQ Society says that the texture of a rib should be able to leave a discernable bite mark and pull cleanly off the bone. This is also the case with the PNWBA. Fall off the bone tends to indicate they are over cooked and meat sticking to the bone are commonly under-cooked.

I agree, my Moritaka Nakiri 165cm has very little curvature - much less than either my Kato 165cm or Akifusa 180cm Santoku.

Paderno of PEI any good?

I have been using PEI Paderno for years and just love it. Make sure it is the Canadian line as they are bringing in some lines from over seas. I do caution you if you have a glass/ceramic stovetop as the grooved base (for larger surface area to heat the pan) may scratch the suface.

Leather strop setup

I have been thinking of changing my 1 sided one to the 2 sided. I think the 2 sided ones I have seen have compound embedded on 1 side and not the other. Are these the ones from Knifewear in Calgary?

I agree with Cowboyardee about the handle. My Knife Guy placed a right-handed bias on all 3 of mine from day 1, but I have heard that they come with 50/50 bias.

The Moritaka is not the Henckels Japanese line - made by the Moritaka familly who have worked the forges since 1293 and been doing kitchen knives for 5 generations. Awesome knives!!! The Keg is light-years better that my Char-Griller Pro. What a great wife I have.

It is my third Moritaka - I got this one specifically to cut smokes brisket. I LOVE this knife!!!!
