Emil Villa'a barbeque sauce

Oh Richard, thank you! The name Aidell looked familiar...he's a sausage maker from San Leandro, so I bet this sauce is right on the money!

THANKS SO MUCH!

No Mick, I don't, but it's sort of a jumping off point, sauce wise.

Top Chef - D.C. - Ep. #9 - 08/11/10 (Spoilers)

I know that Kenny made two bad dishes, but I think the other team should have been disqualified or the losers because they did not follow the rules of the competition. It was very clearly stated that each person had to be responsible for a dish. Alex didn't conceptualize or execute one dish. End of story, team loss. Just mho.

I was watching "Man vs. Food" tonight and Adam was in Oklahoma. He went to a place that makes an "onion burger". It reminded me of EVs burgers, they would ask you if you wanted onions cooked in (yes!). And then DCA mentioned a cooking method of the Kiowa Indians who are from...Oklahoma...so maybe that is where we need to look for clues to making the sauce.

I haven't given up. I just hope that if the remaining branches close, a cook will have pity on us and give us the recipe.

And what about Master Chef?

I am completely embarrassed. The US version is more GR trash, fake fake fake fake. The British, Aussie and New Zealand versions are legit, classy, real and amazing shows. I knew he would do this to the US version.

They have done this type of switch before, but the cheftestants were not the ones determining best and worst, just giving opinions.

Hell's Kitchen new season

Now GR has a Masterchef franchise. The show in England, Australia and New Zealand are a blast to watch, in a very good way, not cheesy. I am worried what he will do with it. I hope he plays it straight. His co-judges are serious chefs with reputations to protect so maybe he will have to.

Top Chef Masters 2 Ep. #2 - 04/14/10 (Spoilers)

I noticed something at the end of the show I have not noticed before...bothered me...it said "Winning and elimination decisions were made by the Judges in consultation with producers. Some elimination decisions were discussed with Bravo."

So, are we seeing who truly put out the best food, or who makes for better ratings?

Top Lines from Top Chef

"What kind of a crack house are you running?"

"I love you like a son" to Mike

"flinstonian execution" to Mike

All from Bourdain on the Thanksgiving episodes, season 2

From Fabio: I also loved the "bunky beds" and "Martha Stewart, my grandma would be so ashame of you", when she didn't like the polenta.

"The Restaurant" or "Last Restaurant Standing" (as Americans call it)

I know a lot goes on in a kitchen that I don't want to know about, but I don't think I could eat in a place run by JJ and James. Filthy. JJ's dirty fingernails made me want to gag, and the hands constantly in the hair, by both of them.

Why would anyone give a restaurant to people who know nothing about food? I'm amazed on this show how little it is about the actual creation of a really good meal.

Hell's Kitchen 10-6: four chefs compete

Ok...I always feel the show is fake, but I watch it anyway...but tonight, Tennille got a make-over, and she started kitchen service with short braids...when he let her go supposedly after service, she had long braids again.

Top Chef Las Vegas Ep. 6 - 09/23/09 (Spoilers)

Doesn't seem like there would be much to do with deconstructing fish and chips...batter, fish, potatoes. I'm trying to think but I don't know what else you would do. It's not complex enough to deconstruct.

Top Chef Las Vegas Ep. 6 - 09/23/09 (Spoilers)

Seemed to me there must have been something we didn't see with Toby and Michelle, coz it's like she came out swinging suddenly with a lot of anger.

Is Michelle sporting a new nose?

I dunno why she bugs me, but she does. Maybe it's the way too big grin or something. "I'm gonna feed you offal and yer gonna like".

Top Chef Las Vegas Ep. 5 - 09/16/09 (Spoilers)

I'm so sorry, and I am ashamed of myself, but I find this season so...BORING. I have saved all the other seasons and so far, I don't want to save this one. There is nothing for Anthony Bourdain to make fun of this season, should he drop by.

Eric Ripert's #1 gal wins a $15k chip...I'm so surprised (yawn).

One sibling gave the other sibling the stink eye...yawn.

To me, these are already top chefs, they aren't telling us anything new. The Voltaggio's and Jen are already established with restaurants and fast track careers.

There is no Mike cooking his best meal on Vicodin.

There is no Elia getting depressed and covering her face in chocolate.

Nobody is going to shave anyone's head this year.

So far, there's no unheard of sous chef who's going to smoke everyone.

I know Tom always pushed the other seasons to do better, and that was part of the fun and the pressure on them, to push it, to shine, but he seems to have gotten his wish this year with higher caliber chefs.

I dunno, I hate to admit that I liked the drama and surprises of the other seasons, and that makes me a reality tv junkie, but if the shoe fits I guess I have to wear it. I loved them throwing a bunch of misfits together and seeing what happens. I don't see this crowd going into a neighborhood and stealing their food and making a block party.

I guess they wanted a high end season and they got it and...it's boring to me.

Yes, I will watch next week. I think a pressure cooker explodes and a Voltaggio gets a little dirty...wow, exciting...yawn.

You Know You've Watched Too Much Top Chef When...

You know you've watched too much Top Chef...

when you dream about it.

Dream #1 was a few weeks ago, it was season 1 chefs, and they had to make a dish depicting their spirituality. All I remember was a big white oval plate, with a scallop in the middle and a yellow comet like streak on the plate. I dunno who made the dish, but Harold was there.

Dream #2 was again spirituality and Top Chef, this time an all meat edition. It was after Hector's hack job on the beef.

I guess you can tell my priorities in life! Spirituality and Top Chef! hahahaha

Top Chef Las Vegas - Ep. 4 - 09/09/09 (spoilers)

Mattin is not my favorite cheftestant, but I don't think he understood Tom's statement about shooting down Ashley's idea.

Maybe I am being naive, but he doesn't speak English that well, and he responds that this was their first shot. So he used the word "shot" in a different way than Tom did. Tom used "shot down" as in killing an idea, and Mattin used it as "first attempt".

I dunno.

Tear on the dotted line _ _ _ _

And I love the newer chip bags or cereal or crackers or other snacky type things that you tug and tug and tug on the bag until suddenly it bursts open and all your treats go flying.

Then...if there are any leftovers, when you roll the bag up, it unrolls itself. Is that so you will eat them all in one sitting so they won't go stale so you have to buy more? Or so you buy chip clips at the dollar store?

Addicted to Cola what else to have to

There is Zevia soda, sweetened with stevia.

Plus there is one other "natural" soda that I can't remember the name, comes in a bottle, that is sold at health food stores that does a diet soda with a sugar alcohol.

I also read that Coke is working on a stevia sweetened cola but no telling when that
will come out.

Also google "Prairie Moon", they made unsweetened soda concentrate so you can
sweeten it with whatever you like.

Two Questions about Merritt Bakery and Resto

I've moved from the bay area and miss many of the favorites I grew up with so I am hoping I can get some help here.

The gravy they put on the taters at the Merritt Restaurant...the kind that comes with the chicken, not the brown gravy...is it a bacon gravy? It's not chicken gravy I don't think. I
remember finding bits of bacon or ham in it, and what looked like and tasted like green onion
tops.

What do you say?

Also, anyone have a similar pancake recipe to theirs? They were so thick but light with a great slightly sweet flavor that I haven't found elsewhere.

Thanks so much!
