Petit Basque Cheese, recipe anyone?
I bought a gorgeous half-round of petit basque the other day. One problem: I have never cooked with it before. Does anyone have a recipe that uses it? (It doesn't have to be the whole thing, just a few shavings is fine too).
Examples:
-Pizza?
-Panini?
-Pasta?

Drowning in Chile con Queso
Oooo! make a makeshift chile relleno. Just stuff it in green peppers and bake it with cheese sprinkled over the top :-)

Beet greens
Although this may not work with Harvard beets, one of my FAVORITE beet dishes is penne with beets, beet greens, garlic and goat cheese (I also throw in toasted, salted pistachios for kick) :-)
