Passover Dinner: Not Brisket, so what now?

If you want to do chicken parts, try what I call chicken Nicoise. Remove most of the skin and fat from the chicken pieces, and saute in a little olive oil to brown each side. Add frozen artichokes, sliced fennel, whole peeled shallots, halved roma or whole grape tomatoes and kalamata olives. Then add thyme, white wine or vermouth, s&p. Cover and bake until almost done and remove cover for the last 15 min. This is a non specific recipe as it is very adaptable to time and ingredients available. You can do everything until the last 15 minutes in advance.

I would suggest trying out some places in Old Town Alexandria. Restaurant Eve, the Majestic, Brabo to name a few. They are not the type of food you indicated but Old Town is also an interesting place to visit.

Does anyone know anything about this place? The location used to be a butcher shop. I noticed this morning that the place appears open with a sign outside stating there is a lunch buffet for 5.99 or 6.99. This is in the middle of many Korean restaurants. There may also be a reference to Chinese food. Just wondering if anyone knows anything.

LOBSTER

You are supposed to put a knife into the head to kill them but I can't do that. I once made baked stuffed lobster for 12 and had to come up with a solution. I boiled them briefly (about 5-7 min) and then drained them in the sink. I had combined sauteed shallots with more butter, scallops in small pieces, crab meat , ritz cracker crumbs, parsley so that it was a rich, fishy concotion. I split each lobster down the middle and stuffed each one with the mixture. I placed them in 2 large roasting pans and then added some more melted butter/ lemon juice for good measure. Baked them at 400 for approx. 20 min. They were delicious and very well received.

Cedar Planked Salmon

I have brined salmon in a salt, maple syrup, and dill solution prior to cedar planking. It is sort of gilding the lily but it is delicious.

Why not buy them at Costco. You can buy them cooked from the food bar or uncooked in the refrigerated area.

The title says it all. I always refrigerate fish sauce once it is opened and my sister says it is completely unnecessary.

Pork Barrel BBQ

I was there one night recently. I was not impressed but no specific complaints either. The sauces are all just OK and the brisket sandwich was very small. My friend had a rack of ribs that were a very good size. Potato salad and coleslaw just OK. I won't rush back.

Cornbread in stuffing

I could have written your entire posting about my cornbread dressing this year. Pan of white cornbread and a pan of yellow cornbread made from scratch, cubed and oven dried. all of the regular veggies, turkey sausage and chestnuts, nuts etc. A stick of butter, 4 cups of stock and 2 eggs for moisture and binding. Dry as West Texas in August! Not able to be salvaged. I will never make 100% cornbread dressing again.

Potato Bites recipe - I have no idea where it came from as it is on a card im my handwriting.
2 eggs 1/2 tsp baking powder
1/4 cup oil 1 sm. onion, grated
3 Tbl. matzo meal or flour 1 1/4 lbs. yukon gold potatoes
1 tsp salt, 1 tsp pepper
Preheat to 400. Grease 3 mini muffin tins. Mix eggs, oil, matzo meal, salt and baking powder.
Peel potatoes and shred in food processor or by hand. Drain potatoes and onion by wrapping in a dish towel and squeezing.
Mix potatoes with egg mixture.
Place a Tbl. of mixture in each muffin tin. Bake for 30 min, switching pans after 15 min. Can be made in advance and reheated.

I LOVE latkes but can't stand the smell in the house. I have done a latke mixture pressed into mini muffin cups and baked. They can be made days in advance and reheated and topped before and during the party. I have used smoked salmon and sour cream, caviar and sour cream, and beets and goat cheese as toppings. For your info - a friend did a latke party and it was very difficult to fry the latkes while talking to guests. It resulted in underdone, soggy latkes. Whatever you do, it is a great idea.

DON'T OVERCOOK. You will have a delicious piece of meat if you don't go over 150*. Use leftovers for fried rice, tacos, rice and beans combinations and stir fries.

Melt butter, add sliced mushrooms, minced garlic, thyme, salt and pepper
Saute for a few min.
Add chicken livers and sherry. Cook until pink. Add some heavy cream, parsley and pour over pasta. Enjoy

Clam Pizza

Try taking the drained clam broth and cooking it down with olive oil, garlic and dried herbs so that it becomes a clam "glue". Brush that on the pie along with the clams a few minutes before it is done. As someone said previously, you only need to heat the clams for a few minutes. If you want you can add grated cheese and fresh herbs at that time.
