I would say it's a toss-up between Toscana and Nicholini's. If I look back many years ago, I would say it was the sweetbreads at a small restaurant in Putignano, southern Italy.

Tomato-cream sausage or shrimp pasta - which I make. Home-made mashed potatoes and a pan-friend chop.
