La Colombe coffee

I know that both Les Cons servent (http://lescs.com/restaurant.html) and Cuisine et Dépendance(4902, boulevard Saint-Laurent
514 842-1500) serve this coffee, I am sure you would be able to purchase some to take home if you ask them.

Fish on the South Shore

Actually there is only one on Taschereau the other is technically on Panama across form the RTL bus terminal. The Former having the better fish selection, they usually have live tilapia, sometimes eel, crab and shrimp., The former's fish selection isn't always super fresh depends when you go. René Marchand on Victoria blvd, is probably your best bet, they have a good variety and their stuff is pretty fresh and the staff there is knowledgeable, prices a little high.

2 Montreal cooks 3-4 days in NY

thanks for the replies keep them coming, Lunch at Per Se would be great but I think A- it's much too late to book and B- Not sure my budget can allow it. I will look into it. Babbo has been on my mind too, kitchen arts and lettters. How is transportation using subway from outer burroughs to downtown? we still have time to change hotel and if transport from queens or brooklyn is easy we could save for that potential extra meal elsewhere? thanks for the help.

2 Montreal cooks 3-4 days in NY

Hi my girlfriend and I have a rare few days off at the end of March and want to take advantage of this time to visit. We have a couple of places already in mind but would love t hear from the locals , the places not to miss. We are looking not only for places to eat (from fast food to higher-end) but also places to shop for interesting goods to bring back. Also just any place of interest that you think we should check out. We are already planning to check out WD-50, Blue Hill, Yakitori totto, Korin, JB prince, MOMA (ok ti's not food related but...) and one of the momofuku's if we can. Let us know where else we should go?

Kobe beef in Montreal?

Not on the Island but Boucherie L'entrecôte in Brossard sells products from this http://www.kobeclassic.com/ supplier , it's a Wagyu Angus hybrid I believe, call and ask what cuts they have available, not the best Wagyu you can get but not too bad either and prices for certain cuts are decent, ask if they have skirt , it makes a decent bavette substitute and wikll probably be cheaper.

In search of Perfection

Snackhappy and eoj have got it right, if you've read heston's stuff before (his gardian articles are all available online) he is a nerd and a perfectionist so he overanalyses everything and tries to zero in on all variables and improve on them, which leads to insanely precise details and a by any method aproach to cooking that is totally unfeasible for everyday use. But I am sure he knows this and is why he also throws all the xtra tidbits about cooking and food science. The idea here is to walk away understing the food better and using some of the techniques or ideas to better or improve your cooking. The idea of using alcohol in the fish batter makes total sense and improves the texture, the tip on cooking the pizza on the back of a hot cast iron pan is a neat trick that will help you get that super crisp crust without overcooking everything on the pizza. He isn't really a conventional chef..I mean his first book was a family cooking book so he's obvious not interested in looking for the easiest cash in..This series is a bit exagerated but his stuff written for Guardian his full of really useful tips.

Where can I buy liquid smoke and bitter sweet chocolate

intermarché 4 freres on St-Laurent has liquid smoke and most IGA's stock it as well. as for bittersweet choco, if you mean the Baker's stuff any supermarket should stock it.

Brunoise or La Montee de Lait

I haven't eaten at either in a while but it strikes me as the opposite, brunoise's service seemed more refined than la montée de lait. When I have eaten at brunoise it' been a solid meal, not sure about how the tasting menu stands because when I dined there it was only the prix fixe menu. Really good execution, based on good flavours, a little adventurous but not too much, you can't really go wrong at Brunoise. As for MDL the service was nice yet still familiar not ultra professional, but the digs are cramped for sure more of a winter problem than summer. As for the food, it was excellent, adventurous combinations and new techniques used but sometimes the artifice surpasses the taste, fun, good meal, interesting wine choices. Either way you will have a good meal but I think it depends on what kind of atmosphere you want.

Best Game meat.

Carswell, most of the hare you find is indeed frozen because the demand isn't steady enough , as well as most of it should be wild, I dont know about wich places locally sells it but what La maison du Gibier sells is wild. Caribou is indeed wild because it is part of a controlled hunting in Nunavut and Yukon, the natives hunt Caribou and the carcass is butchered in an local approved facility, frozen and shipped out. There is also Seal meat (Loup Marin) wich is also wild but harder to find.

Montreal tea mavens: opinions on Camellia Sinenis Tea Shop, others?

I haven't visited a lot of other tea shops but I find Camelia Sinensi to be the best, all the staff is extremely knowledgeable about the products, many of their teas are obtained directly from the source and they have plenty of private imports. The quality of their tea is amazing worth the price in my opinion, not the place if you like a lot of flavoured teas or really robust english blends and the like.

Sunchokes/Jerusalem Artichokes

At the restaurant we we're getting them all summer and all of a sudden a month ago, nothing our supplier had none left, I asked around at Atwater market and no one has some. I haven't tried Jean-Talon but I assume you can get some at Chez Louis or at Nino's . Most of the time you can get them from late autumn into winter.

Good Places to Eat in Montreal

I can add or second to those reccomendations,
Au Cinquieme Peche(small cozy resto but really well executed food), La Montee de Lait(same as before but with a bit more emphasis on hipper ingredients and presentations), club chasse et peche(truly perfectly executed food , great atmoshpere and decor), Les deux singes de montarvie(biased opinion i work there). As far ash shops, Jean-Talon market has a plethora of shops for everything you might want, i just found this great charcuterie stand there yesterday "Les cochons tout rond".

Laurent Godbout's Version of Starving

the reason why you waited so long is that Laurent has treated his kitchen staff badly for so long, that most of his key members quit over the last few months and he is extremely understaffed.

Where is the owner of Restaurant Deux

Hi I was the lunch chef at le deux, glad to know you enjoyed the food, There was some disagreement between owners and John has stepped down, I left at the same time because I knew the other owner would not work half as hard we did. John is still working at cafe souvenir on bernard st.(wich was his other gig), I am now working at Les deux singes de Montarvie on st-viateur O. I'm happy to find out from someone that our work was appreciated.
