My grandmother was a French Canadian from northern Maine ( all the way up ) I remember something she used to make called croton which is a pork spread that she served on toast. Basically, it's a pork butt cut up and mixed with onions & spices and boiled until it's a paste, then it's chilled and used as a spread.

I've never really seen it outside of my grandmother's kitchen. I miss her dearly

The roast beef MAY be alright if it was wrapped tightly. You have to toss the mashed potatoes. I'm of course assuming they have butter and cream or milk in them. Either way, throw out the potatoes

I use garlic and onion powder only in dry items such rubs or seasoned flour. I would also stay away from garlic and onion salts. That gives you control on the amount of salt you're using

I always use 100% chuck. I find it has the right fat to meat ratio. Grind it once thru the coarse cutting plate then twice thru the fine

+1 on Lao Sze Chuan Very authentic and good Chinese. There is another place on Boston Post in West Haven that is also very good (and a little cheaper)

I grew up on Charles' chips too. We always had a big yellow can of chips in the kitchen. They were great! To this day, I can't have a sandwich without chips. Potato chips are definitely my weakness. I like Utz and Wachussetts brands (probably local) preferably ripple

I wouldn't. As the flour sits on the meat it will absorb the moisture and get gluey. This will affect the coating when you saute

I never heard that you can't freeze dairy. Ice cream, yogurt, and even cheese freezes well. The meatballs will freeze very well. You might want to eat them within 6 months though.

If you absolutely must, try Gordon's beer battered fish tenders. For supermarket fish sticks, they are not that bad
