Alternative Beef Cuts for Chinese Stir Fry

I second that, FLat Iron steaks are near premium price here and at least $5 to $6lb on sale. I can't even get 80/20 hamburger for under $4lb.

Artichokes - Conquering the thorny thistle. Help

I generally just steam mine and then go leaf by leaf to the center with a bowl of butter. But if you don't want to do that you can discard the tougher outter leaves. There's a lot of waste in artichokes. Then peel the bottom around where you took the tough leaves out. Then cut in 1/2. You will then see the choke, use a spoon and get the fuzzy bits out. Trim the top to neaten it all up and put in bowl of lemon water to keep them from getting too brown from the air. Then you can drizzle with some oil and grill. Or you can stuff the halves.

This is America's Test Kitchen's recipe for moist thin pork chops on the grill. Its fail safe.

pork chops are great on the grill, just make sure you use this topping to assist in browning thinner chops. http://www.createtv.com/CreateProgram...

I promise you that you will NOT taste the anchovy, but its vitally important to this recipe to assist in the umami. Also make sure you cut the fat in 1/2" increments to keep the chops from curling. Go ahead and use cheap thinner ones, they are quick and taste great.

Can I restore this silver plated flatware?

YOu can go to a music store (one that works with band instruments) and get a silver polishing cloth. That will brighten them up right away. But keep in mind that anything you do that has to do with rubbing takes away some of the silver.

Marsala wine substitute?

Marsala has a very distinct flavor. IMO, you cannot substitute it. This recipe will probably be fine without it, but it won't have the flavor marsala contributes. If you don't want to use marsala then don't. But its not going to be the same recipe.

How do you feel about dogs in the grocery cart?

This actually happened to me. I was in a BevMo (an adult beverage retail establishment) and waiting in line. The woman in front of me put her baby, in diapers, on the counter right by the register. This is where you usually put your products to the cashier to ring up. I waited for her to finish her transaction. She picked up her kid and purchases and went on her way. I moved my products and purse onto the counter only to find it soaked in pee from her kid. Now.......how disguisting is that? My purse is covered in pee, my products are covered in pee. All because she put her kid on a counter where food products go. Its just nasty. On my way out I saw this woman putting her kid and stuff into the car. I told her "your kid peed on the counter where my food stuffs went" and she just shrugged her shoulders. She didn't care. I am against animals in non animal places and that includes eating establishments and grocery stores. UNLESS they are certified service dogs. I also do not think you should put your child's butt on the counter the next customer is going to be putting their products on.

Cornish Hen question

I'm sure you hens were great. And I've roasted many of them. But recently I've found that these guys are small enough to fit in my deep fat fryer and that's what I've done with them. They don't take all that long either, maybe 10 min. I just make sure that they are defrosted fully and set up to drain, so they are as dry as possible on the outside. That way there's less splattering. This is also how I get crispy skin on oven roasted birds. Make sure when you put it in the oven, that the skin is as dry as possible.

People that live with pets have a different tolerance for those pets and their impact on their day to day activities in their lives. People that do not live with pets are often not accepting of this owner/pet intimacy.

And like one poster listed. They are more old school in that the more germs you are exposed to during your life the more tolerance you build against your basic set of germs.

This is not to say that anyone needs to accept eating out of a litter box. But people with pets, even pets that get on the counter, do not often prepare their foods on the counter. They use cutting boards that are cleaned after use. So even if the pet is on the counter (which I accept as being something only pet people tolerate), food is not necessarily prepared on that surface.

Because I grew up in a multi pet household. I was revolted later in life to learn that people actually prepare food directly on their counter tops. We never did as I grew up, it was never considered.

Litter boxes in the kitchen are a bit strange though.

spot prawns vs royal red shrimp

I have an opportunity to buy either. What are the taste differences between the two? The spot prawns are double the cost and are head on, shell on. The royal red shrimp appear to be just raw shrimp meat. I was going to use them on an entree salad for tonight's dinner.

How Do The Chinese Restaurants Get Their Chicken So Tender???

Since hearing about velveting I've been doing it for chicken stir fry dishes. This is how they do it. So follow the directions as indicated in the thread or http://www.youtube.com/watch?v=AE1EXv... If you freeze the chicken first to almost solid, it will be easy to slice into pieces.

Royal Red Shrimp

I found some Royal Red Shrimp at Whole Foods market this week. They were already peeled and sold raw/peeled/deveined by the pound. They did not look like shrimp. They looked just like a mass of some kind of raw seafood you could not discern individual shrimp. Is this normal for selling this kind of shrimp? If they were individual shrimp they certainly were not very large, about the size of "salad shrimp". You know the ones that are like 61-70 ct.

The Costco Thread (Ontario - 2014 - part 1)

Frozen Hake Loins.....let me preface that I love fish. All kinds (well maybe Salmon not so much) fried, baked, grilled etc...... I bought these a couple weeks ago. I gently defrosted one in the frige. When I went to cook it, I immediately had my reservations based on the texture of the thawed fish. It was mushy,watery and falling apart. I patted it dry gently and pan fried it in a simple breading. It tasted as bad as it felt. It reminded me of a can of cat food when opened. I could not eat it. Bad buy.

I have to agree with others. You invest $30-50 on a hunk of meat for a special occasion and can't get a $5 meat thermometer, if not a digital probe/timer? Even on Christmas morning we had one chain of grocery open. They have thermometers.

hard to peel boiled eggs

What's with these things? I use the same method and sometimes they are near impossible to peel. I end up throwing them away in frustration. I've heard that the fresher eggs are hard to peel I've heard that you need to run them under cold water, all kinds of tricks. But I start them with cold water, bring to a boil then let stand for 10 min. Normally they turn out just fine, but every once in a while I get a batch where you cannot peel them without peeling off most of the white.

And when most of the cooking folk would say that "I can make that cheaper and better....." the non-cooking folk don't know the difference nor do they care to. All they know is they are putting something to eat in front of their family. I have a co worker that still thinks cooked rottisserie is as cheap a meal as you can get considering all the left over options. Of course if you are paying more then $5 for that cooked chicken then it is not the cheapest option because I can put 45 min into a whole chicken and get it cheaper.

yep, my husband's parents ate like this for years. They'd actually go out to eat at Marie Callendars or similar place. Eat salad for dinner that night at the restuarant and take home everything else and eat that for a couple more days. Then its time to go out again. When we'd visit couple times a month on the weekends (we didn't live that close) I'd always try to COOK something in house.

First of all....no breakfast
Fast food and pizza. 2/$1 tacos at Jack in the Box
Frozen chicken nuggets/fingers
box dinners like Hamburger Helper
Most can make spaghetti with canned sauce.
Other frozen options and then eat the left overs.
some can even make a baked potato in the microwave.

Trader Joe's Yay/Nay Thread - December 2013 [old]

YAY for those little chocolate covered waffle cookies with peppermint chips of candy on them.

YAY for McIntosh only apple juice. This is amazing and well worth the little bit extra.

MEH for the duo of chicken enchiladas in the frozen section. So little cheese on these that its an insult how little is there. Add cheese is first order of business. Then it almost makes it to a YAY.

Slow Cooker Pork Shoulder

I am doing this recipe tomorrow for the second time. Its a great recipe. Just follow it. I put the fat side up so that any rendered fat went through the meat. When I got home from work, amazing aromas were in my kitchen. I pulled out the meat, took off the biggest pieces of fat (the fat cap) and went through and shredded it. Again, discarding any significant clumps of fat. I suggest using the LOW setting, since modern day crock pots heat higher then the older ones. Don't worry it'll be done.

Easy meals for a young guy on his own for the first time

Get a can of canned chicken or turkey. A can of cream of chicken soup or cream of mushroom soup. package of egg noodles. Cook noodles until almost done. Stir drained can of chicken or turkey, a can of cream soup and the noodles. Put in a 400 degree oven and heat through.

Easy meals for a young guy on his own for the first time

couple of first "dinners" I cooked.

Simple stir fry. You can buy the meat already cut into strips at most groceries. Just pick the beef strips for stir fry. A green pepper and a tomato, plus rice. And Minute rice is fine. All you do is marinate the beef in 1/4C soy sauce with about a Tablespoon (little handful) of sugar. for about 30 min. You get the minute rice started in another pan. Then in a pan put some oil, toss in some dry ginger if you have it, if you don't no problem. Heat pan with ginger a few min. Then squeeze out the juice from the meat and put it in the pan, cook meat about 2 min. then put in sliced green peppers, cook another 2 min. Then add diced tomato (one tomato cut roughly into small pieces). Mix remaining juice from meat with a Tablespoon of Corn starch, and add to mixture to thicken. Then serve over rice.

Recommend a beef roast, please!

I find it pretty tough. I try to find a top sirloin roast for roast beef. Most times it comes in that netting. But the best of course is prime rib roast. And I will buy a couple around the holidays when they are on sale and freeze them.

Still no recipe surfaces for these egg rolls? I am so curious as I never tried them. But had some egg rolls in a tiny place in LA that was not full of veggies, more meat and these sound the same. Would love the recipe.
