Are we talking the 5 minute no knead bread? That does not get covered and has a terrific crust in an uncovered loafpan.

Where to get Giblets and Gizzards

Where can I buy just the gibletsand gizzards. Have been asked to test an Italian recipe that calls for giblets, gizzards, cocks comb and testicles. Am quite willing to forego the two last ingredients.
I don't want to buy 3 chickens to obtain the innards either.

Using loaf pans with Artisan Bread in 5

I make the breads in a loafpan all the time. However I do'nt use the whole batch I divide it into two equal parts and keep the second in the refrigerator until needed. I use 2 plastic containers for storage, The loaf is shaped, put into the loafpan, left to rise, slashed baked 30 minutes in 450 oven, removed from pan and given another 10 minutes in the oven. I use the same methods for White bread as for the 10 grain. Perfect Sandwich bread every day.

Wa Jeal -New Sichuan Restaurant 83rd/2nd Ave

Went last night with a friend. Neither of us can handle overly spicy food. From the cold appetizer list we ordered the Diced Rabbit and Peanut in Chili Garlic Black Jam, Stuffed Porkbelly with Cucumber in Chili Garlic Sauce. From the Chefs Meny we had Shredded Camphor Tea Smoked Duck, Wok Roasted Lamb Ribs and Baby Eggplant with spicy Garlic Sauce.

The Rabbit though very good had small pieces of bones and was fiery hot. The waitress returned it to the kitchen and it was toned down. The rest of the meal was incredible. We couldn't stop eating The Porkbelly. The Lamb ribs are really Baby Lamb Chops and totally delicious. The Camphor Tea Smoked Duck though good could'nt compare with the lamb. We both felt that we had had an extraordinary food experience.

The restaurant as noted by others is brand new, co-owned by the chef and a Sichuan woman named Vicky. The restaurant was almost empty which is such a pity when it serves great food and hasa very friendly and attentive staff. Right now it is BYOB so the dinner tab is not as high as it will be later.

Curry Leaf on Lex / Cambodian Cuisine on 3rd

Went to Cambodian Cuisine tonight. It was my first experience with Cambodian cuisine, i had nothing to compare it with. Being by myself I ordered the Fish Cakes and Chicken Ahmok.
I thought both dishes were very delicious especially the fish cakes.

The Chicken Ahmok was quite a surprise. It was presented looking like large pancake with a circle of red pepper on top, with a few leaves of steamed collard greens underneath, sitting in a clear broth . It was seved with either brown or white rice. It has 2 chilies next to it but was very mildly spiced.

The restaurant is large and for a Sunday night on the UES quite empty. Service was very prompt and efficient, and I will very likely go back when I return from Cambodia.

Cheap live lobsters?

My favorite place in Chinatown is at 40-44 Allen St. Hester Street. It's called the Lobster Farm. I think I paid around $7/lb in June for the 1 1/12 lb lobsters. The smaller ones were less. They are very nice to deal with and speak English.

Grayz: Have you been?

As far as I am concerend this restaurant is on the top of my list to go back to when it reopens in September.
Went for dinner on Monday night and was bowled over by the food and service, decided to go back for lunch with my son today it's still RW. It was still a "WOW" experience. We were both very impressed with the food, it was also nice to be recognized with a welcome back. Even at lunch we were presented with the certificates.

It is a solid 10

We sat at the counter only seats available, but don't recall the chef preparing the food in front of you . The feeling and look is quite different from Paris. The food is as outstanding and I love L'Atelier

Where do you buy your soft shells?

Haven't checked their prices on the soft shells, Sea Breeze on 9th Avenue and 40th Street usually has very good prices for mid town Manhattan. Give them a call.

I paid 3.50 a couple of weeks ago at Citarella on 3rd Ave.

Does anyone know where I can buy starter culture for yogurt?

Most healthfood stores, or Google yogourmet probiotic starter and you will get a lot of results.
