My grandmother's fried fish, red snapper or speckled trout, skin on, and her fried chicken. I've got the fish down pretty well, I can't touch her chicken.
My current drink of choice:
I really like a good margaita, best is at Arturo's in Nuevo Progresso just across the border. Just lime juice, cazadores, and controy. Somehow the controy tastes better than actual cointreau.
I really wish I could:
Have enough time and money to fish and play golf. I can only be good at one, for now it's fishing.
My "Go-to" dinner party dish:
What, exactly, is a dinner party?
My favorite comfort food:
Oysters anywhere, anyway, anytime, except chopped. How can anyone chop up an innocent oyster?
My top 5 favorite restaurants:
Brennan's Houston, Carrabba's Original on Kirby (not the chain), Red Snapper Inn, Surfside, Galvan's Bbq, Richmond, El Tiempo on Washington, Loew's Drive Inn Theater snack bar as a teenage cook, City Market, Luling. El Jardin east Houston Barrio
My most tattered cookbooks:
Oceans of Cooking from Rockport also Pirates Pantry out of Louisiana.
