It’s out with the box grater and in with the Microplane
I use the wider microplane for hard cheeses. Don't throw your box grater out completely cause you'll need it if you ever grate soft cheese like mozzerella.

Thanks everyone. I like rolls and my husband and son are far more adventurous sushi/sashimi eaters. We have been to Little Katana on Travis a couple of times. Maybe I heard wrong but I thought I heard that Teppo had some Health voilations problems..no? If not, we might give that one a try since it's close and probably cheaper that Tei tei.

Another knife question (I know they never end)
A knife can be a very personal thing. One person may love the way it fits in their hand and the weight may be perfect, but another person may not like it. If, after looking for reviews you hold the knife and get the info from the salesperson , then buy it. WS should stand by their product and allow you to return them if you end up hating them. SLT does.
Hand frother that works? Or is it the creamer?
It's the only small unit I know that heats and froths and turns itself off. Pricey but very functional.
Covered Saute/Fry Pan
I have the 3-ply stainless saute pan from SLT and like it very much. Any quality saute pan would work and they have a nice flat bottom for max cooking surface.

Do you like the milk heated too, I assume? The aeroccino by Nespresso works well. You just put milk in and turn it on and it bring the milk up to the right temp and turns itself off. You can just have steamed milk, for lattes or add a little spring to the agitator and it froths the milk. It's $99. at SLT but you could probably find it cheaper elsewhere. It does work well though.
Baked whole chicken without roasting rack
I like to line the pan with slices of lemons and oranges, stuff the chicken with tons of fresh herbs from the garden as well as more citrus slices and garlic. I bake for about 20 minutes, breast side down to get it really juicy then flip it over to brown it. I baste it with butter and juices from the pan.
Dishwasher Safe Knives...is there such a thing?
I certianly never indicated that you shouldn't put anything in your dishwasher. When you're finished using your knife, just turn to the sink, give it a rinse and dry it with your towel...done. It is not the same thing as putting flatware in the dishwasher. Not all knives are made of the same metal and some will not last as long. I am not against dishwashers, just preserving what you spend a lot of money on.
Am I the only one who finds Al Clad difficult to clean?
BKF will take the yellowy grease off the sides and bottom of your pans, it will take the blueish color out and will polish the pans to look like new. You can find it at any grocery store next to the Comet and Bon Ami. You don't need any other product to clean your stainless.
Impossibly scorched saucier
You may have tried a versio of this already, but I would make a paste with water and Bar Keepers friend in the bottom of the pan. Make sure you have just enough water so it is more pastey than powdery. Let it sit for at least a hour. Then get a teflon scrubber and give it a try. I have gotten impossible baked on grease from glass pans with this stuff. Good Luck!

Over time, the water, heat detergent will not be kind to wooden handles and can rust or discolor some metal. Why is it so hard to wash and dry a knife that you just used, while it's still in your hand?

which ever the problem is (food or grease) bar keepers friend WILL take it off. You will spend so little time scrubbing you'll kick yourself for not trying it earlier. I get the pan wet, sprinkle on BKF then use my teflon scrubber to get off any stuck on foods as well as the yellow grease that seems to get all over the bottom of the pan. If you find something particularly tough, make a little paste with the BKF and let it sit for a minute before scrubbing. It will work. It's also perfect for any other discolorations you might have.

Not sure about the restaurant but those bar snacks or tapas portions you mentioned are called cicchetti (sp?) in Italy.

SLT pans are made w/ tri-ply construction just like All-Clad. The main difference is that All-Clad is made in the USA and SLT stuff is not. When cooking w/ stainless, you have to let the meat sit for a few minutes and it will release from the pan. I cook in stainless pans all the time. Also, if cooked in properly, stainless is a breeze to clean up.

Sur La Table will do it for $1. per blade inch and twice a year they will sharpen your first 2 knoves for free (usually in the spring and fall). I've used the one in Dallas with good results.
