Testing if oil is hot enough

I used to be a professional cook and when I was in my first restaurant, I was taught a couple of things:
First, don't put the oil in a cold pan. You don't want to wait until the oil is smoking to know it's too late. Get the pan nice and hot, have your oil and first ingredients ready, throw your oil in and a second later your ingredients and saute immediately.
2nd, if you have more sensitive items: get your pan relatively hot, put your oil in and when it "runs like mercury" you're good to go.

PJ Clarke's is very good. Also I love Five Guys. I think the secret to both of them (and probably shake shack too, though I've never been) is that they cooks on a flattop! Not a grill! Keeps it all so JUICY.

Superfoody visiting NYC and Queens/Bklyn

As far as a good mix - Sunset park in Brooklyn is very good. Try Tacos Matamoros on 5th ave and 45th street (buy yourself a beer to bring in) and get yourself some Al Pastor Tacos. Also Ba Xugen on 8th ave and Lucky 8 on Eight too. Try all the pizza you see in BK that isn't a chain.

My good friend raves about Grimaldi's. Besides which, lots to walk around and see there. My favorite is my local pizza shop - Ganni's on Myrtle and Franklin. mmmm

Pacificana is good for Dim Sum. My favorite Mexican is Tacos Matamoros on 5th and 45th. Also good is Eclipse Mexican and American Restaurant on 4314 4th Ave
between 43rd and 44th. They have a patio and also have a "Bucket of Beer" (five beers in said bucket) for $11. A very nice Friday evening option!
