Your Perfect Sandwich

I'm a simple man. A just picked tomato with swiss and mayo on Health Nut bread is other worldly in my book. The best store bought sandwich I've had is the muffaletta from the Central Grocery in NO.

Help Me Like Sam's Club

Sams has bone in Boston butts, Costco's are boneless. Sams has packer briskets with the flat and the point, Costco only sells flats. If you smoke meat, that's a big difference and the reason we've had both memberships. I recently joined Restaurant Depot and all my meat problems are solved and I can quit Sams. They're customer service has gone down hill dramatically in the last few years.

Recommendations for Knoxville, Nashville and Memphis

Hadn't really thought about guidebooks but you're right. Before we moved here we picked up a guidebook for Nashville visits. It was extremely useful. That said, 10 year old daughter tells us a lot about your needs. It's safe to say this is a kid-centric visit? I think the Country Music Hall of Fame would be a fun and valuable experience for her. There is a sciencey thing for kids that I know nothing about.There's a church downtown that has a world class collection of marionettes and has marionette shows from time to time. There's a paddle wheeler that goes from Opry Land to Nashville that has a stage show and meal or just the ride and a very good band. Then of course there's the Grand Ole Opry. If she's open to music other than pop it should be a lot of fun. The Nashville visitors center has lots of information and offers discount ticket packages. To be honest, I think you could come to town, hit the visitors center and put together a very good itinerary. If you want to bring your daughter to an entertainment venue BB Kings and the Wild Horse Saloon are family friendly and the Hard Rock may be too, Have a great visit and let us know how it goes.

I hit Robert's Western World for the first time a couple of weeks ago. Not a food destination for sure, but one of the best music scenes downtown. Real country played real well.

Making Smoked Butt

I think Uncle Bob's comments are spot on. I would add that when smoking pork for pulling I probe for a butter like result that can happen anywhere between 185 and 205 depending on a number of factors. When I sliced a butt I went to 160 and while it was fine a little more time in the smoker wouldn't have hurt. I sliced it very thin with an electric knife and put a few sandwiches worth up per vacuseal bag. They made incredible reubens.

What defines Kansas City and St. Louis styles of BBQ ribs?

I don't know about the saucing but St. Louis style rib has the riblets and flap meat removed. The trimmed ribs look similar in size to a rack of babybacks.

Where are you monitoring the temperature. You should be taking it at the grate. You might also check your thermo in boiling water and ice water.

I know, it's crazy isn't it. I don't know why this isn't the go to method for cooking pasta. I wonder what else it would work for: hard boiled eggs, corn, really anything that's boiled for 15 min. or less. Think of the energy it could save if it was widespread. Oh well.

Thanks for giving me the credit but in fact it's the teachings of the top competitive smokers. I refer you to bbq-brethren.com where the doneness tests I offered up are considered as reliable as the sun rising in the east. It is also my experience that a butt can be tender between 190 and 205. The probe doesn't lie. I'm happy your method works for you.

Time per lb. doesn't work and internal temperature is iffy. There is a saying among smokers -- it's done when it's done. The tests are these. A skewer should go in like it's going into butter and not just in one spot but numerous. Butt is a multi-muscle roast and one muscle (the money muscle) gets tender before the others. The other test is the bone will pull clean and easy when it's done. I smoked two 8 lb butts this weekend. One was perfect at 10 hrs at 250-275. I lost patience and pulled the second at 12 hours and it was disappointing. I chopped it and put it up separately and will use it in chile. BE PATIENT.

be careful you don't over cook. It can get very mushy. I'm sure you'll do fine. Next get yourself a Weber Smokey Mountain and embrace the smoke. 8)

Foiling is optional. It helps preserve moisture but it can soften the bark. I wouldn't foil until the meat is 160. When you're done defat the pan juices and mix back in the pulled meat. I like to add a little cider vinegar heated with brown sugar and pepper flakes. I know you don't like vinegar but cider vinegar is mellow and it balances the richness of the pork.

275 is a good cooking temp. I agree there's no need to inject or mop if it's a well marbled roast. 200 is the average done temp. The test is a bone that pulls out easily and probing with a skewer should feel like butter. I'd use a remote thermo for roast temp. Every time you open the oven door you lose a significant amount of heat and extend cooking time. There are loads of good rub recipes on line. Most contain paprika, granulated garlic, salt, brown sugar, and other spices. Apply it liberally. Rub = bark. Bark = flavor. Good luck.

I bring water to a boil, salt, put in pasta, return to boil, stir, turn off heat, and leave covered for the recommended cook time. Flawless.

Frozen Pizza

Costco's Kirkland brand drizzled with olive oil, seasoned with salt, garlic powder and chile peppers and some thin sliced onions is a favorite in our house.

Friday Later Dinner in Nashville?

My visiting family (Boston / San Diego and regular high end diners) and my wife and I always enjoy F. Scotts. The food and wine service are very good. They have great live jazz in the bar. It's pricey but food is half price after 9. People on the board complain that the room is cold, but I've always been very comfortable there and left feeling well fed, well served, and well entertained.
