Bulk Spices

At the Coop they're totally modern--the jars have scoops in them! And as I've said before, they have lots of organic spices, herbs and teas. I still have some organic lavender I bought last year to make ice cream with and it still smells great and made great ice cream almost a year later. (I have it in a plastic jar.) They also have a very good rate of turnover so I don't think the bulk products hang out for very long. I joined the Coop for $25 a year (for 8 years). You can leave any time and get a refund for your membership. But once you join, you get lots of discounts and rebates, if you spend a lot of money there. The quality is excellent.

Go to Cooportunity in Santa Monica. They not only have bulk spices, but they have very good ORGANIC spices including organic lavender which I used in ice cream and it was very flavorful.

finding lemon oil for baking??

Boyajian is THE BEST. I use it all the time for my lemon poppy seed butter cake (a Williams Sonoma recipe). They used to carry the lemon oil but I don't know if they still do. I think Surfas in Culver City has it. If not go to the Boyajian website. It makes all the difference in the world. The lemon oil is SO FLAVORFUL and ROBUST you only need a little bit. I've always gotten it at Surfas. And NO, you can't use lemon extract. They are NOT INTERCHANGEABLE. Surfas website and store do not always have identical items. The store probably has a lot more!

Malted Milk Question Please

I'm a big fan of the Old Fashioned Malted Milk powder from CTL foods. I don't work for them or have any commercial interest in the company. I use their product exclusively and the malted milk powder is what you remember as a kid in a malted. I make a malt ice cream that is SUPERB and everyone I know LOVED. (The recipe is on this website somewhere under CACAO NIB MALT STRACCIATELLA). Go to CTL FOODS in WIsconsin. Horlicks and Ovaltine ??? NO WAY, JOSE! They taste like CHEMICALS and the fact that Horlicks is owned by a pharmaceutical company just doesn't rest well with me when you're looking for FOOD products.

I believe they will even send you a sample.

Where to buy cacao nibs?

You can find them in any health food store but the BEST place to get them is They are organic and the cheapest available in So. Cal. You can get 2 1 lb bags for about $25. They're about $14-$16 a lb or more in Whole Foods. I always get mine from Amazon.

Advice needed on sorbet/gelato makers

I have a Musso Lussino (made by LELLO) which so far is THE BEST of all the ice cream makers I've owned. These included the KITCHEN AID BOWL ATTACHMENT, the Lello Gelato model (made in China) and some other one where you freeze the bowl. I actually did a head-to-head comparison with the Lello Gelato vs. the Musso Lussino and there was NO COMPARISON. The Lello Musso Lussino was much better: the consistency was much creamier than the Lello Gelato. I used the same "base" at the same time poured from the same batch. This is a $699 unit and for the price, it's the best. I use it at home and it is SUPER. This one is made in ITALY and the only plastic is the lid. My only complaint is that the bowl does not come out for cleaning but it probably freezes better that way. You have to add water and then sponge it out. The dasher (blade) is a variable speed which unlike most of the cheaper units, can speed up or slow down depending upon the consistency. The KITCHEN AID BOWL ATTACHMENT cannot do this. I got rid of mine! This baby is a KEEPER and if you like ice cream and frozen desserts, I highly recommend. I do not get ice crystals with this unit!! I did with all the others.

Don't use grocery store malted milk powder. They ALL taste ICKY. I use and HIGHLY RECOMMEND "SODA FOUNTAIN MALTED MILK POWDER" which is available (only?) online from CTL FOODS in Wisconsin. I've made a malt flavored ice cream which is FANTASTIC and it's the malt. This malted milk powder tastes like an old fashioned malted you got when you/I were/was a kid! It's worth the extra money. Ovaltine, Carnation, and Horlicks don't hold a candle to this stuff. It's not cheap but it's worth it. My friends say my malt ice cream is THE BEST and I should sell it.
