Does anyone out there know where to buy fresh (never frozen) whole ducks in the Phoenix area? Lots of places have frozen parts, but not whole ones.

Mexican Cookbooks
Just to muddy the water a bit. We have had for years three books by a wonderful Mexican cook name Elena Zelayeta. She owned a restaurant in San Francisco for years. I am sure she is long gone. One of the books, "Elena's Famous Mexican and Spanish Recipes" is dated 1944. The books are long out of print, but Amazon has an incredible number of used copies. The recipes are simple and straightforward and muchos sabrosos.

Does anyone of a source for Atomic Horseradish in the Phoenix area? Our daughter in Burbank found it at Ralph's, but no Ralph's here. For those who have not tried it, it is mind and sinus blowing.

My wife and I just had lunch at Bryan's today. Both of us had pulled pork sandwiches, which were even better than I remembered.
Elmo, all you had to do was ask Bryan to see the smokers in action and he would show you. I did and he did. Neat state-of-the-art. He uses pecan for a more delicate flavor. If you are used to hickory, it might be too subtle.

Bryan's just opened last week after a long wait. Wife and I went there the other day. We both had pulled pork sandwiches. I had the olive cole slaw, great, and she had potato salad(greater). With every order you get a bread and butter jalapeno (greatest).

vinegar making
When you said that you never added white wine to the container, did you mean that you just never did add any or that there is some reason not to add it? I was taught to make wine in France and they added both white and red to their container. They also gave me a pint of their mother vinegar to bring home. My vinegar has both red and white in it and it tastes very good. Also, they told me that pasteurized wine should not be used as it will not turn to vinegar. The local wine shop told me that the only pasteurized wine is kosher wine. I'm sure that I have probably dumped some wines containing sulfates into my container, but have had no problems with getting it to produce vinegar. Good luck with your vinegar.
Where do you buy salami? (PHX)
Just went to Tony's Deli on Dunlap just west of 7th St (northwest corner, in Tony's Plaza). Small place, but packed with Italian goodies. I had a salami and cheese sandwich that was really good. Sample some sapperosata (sp) that was REALLY good. Their card says homemade sausage and salami, but I didn't ask about those. Good selection of pasti, both packaged and bulk. Some we had never heard of.

In addition, don't forget bottled water. Maybe a couple apiece. It is really easy to get dehydrated here from the heat and low humidity.
