What to pair with potato pancakes??

HI!

I am making potato pancakes, serving them with smoked lox, thinly sliced onion, capers and sour cream. This will be for the appetizer.

Can you help me decide on a nice entree to serve afterwards? Nothing with red meat please.

Does anyone still eat crabapples?

OH MAN! I love crabapples!!
I love them fresh....they are also great in pies.
Also, I don't have a recipe for it, but canned spiced crabapples are deelish..bright red in color, flavored with cinnamon, cloves, etc....

Hikari Miso Soup??

Thanks for info. As a nutritionist, I think miso is great and already know a lot about it. I was just wondering if anyone else knew of the brand and where to get it. As I mentioned, Hikari is a brand, and the fresh miso soup I got from them was full of tofu, seaweed and green onions.
Unfortunately their website is rather vague. If anyone knows a place in British Columbia where I can purchase any Hikari miso products, I'd be really grateful!

Hikari Miso Soup??

I've discovered a "to die for" fresh miso soup that I want more of. I bought some at a Food and WIne festival, after having tried so many bland ones. This brand Hikari is amazing, I have at least one bowl of it everyday! Full of tofu, seaweed and green onions. Anyone had it, know how to order it, or where to get it in British Columbia??

What's your favorite thing to do with chevre?

If you form it into little balls and roll in toasted crushed almonds, they are devine served on top of a mixed mesclun green salad with dried cranberries and simple EVOO/balsamic/herb viniagrette.

I also have had goat cheese served simply with bagel chips and a sundried tomato salsa that was fantastic.....

Shrimp/pesto and goat cheese omelette.....

Served on crostini with a berry relish of some kind. I've had it this way with a cranberry/pecan relish and it was amazing.

TOO MANY CHICKEN EGGS!! help!

Okay, my free range happy chickens are "a-layin" and I am not a scrambled eggs for breakfast person. Quiches and custards----I've done them all. Omelettes, I've eaten a million. Souffles...my husband is away and I'm not making one for just myself. Frittatas....I'm all frittataed out. Anyone have some unique fabulous recipes for EGGS??????

What's going on the grill today ?

Yah...me again....
I heard of this "grilled" soup today and thought it sounded good....
Grill cut lengthwise carrots and some onions......then chop up and blend with veggie stock, some cream, ginger, garlic, s & p. It looked amazing.

Grilled fruit for dessert is great too.
Drizzle fresh halved peaches with pit removed with a little honey and grill.
Or try some thick slices of grilled fresh pineapple, garnish with toasted coconut.

All taste great with vanilla yogurt or vanilla ice cream!

What's going on the grill today ?

Grilled pizza is amazing!
I let the bread machine make the dough while I'm working, then I take it out and start make individual sized pizzas.....great with just a nice simple tomato sauce, mozzarella and fresh basil, or grill some veggies first like eggplant, zucchini, etc and place on top of a pizza "shell" drizzled with pesto, sprinkle with parmesan!

When did fake crab meat become so ubiquitous? And why isn't anyone else complaining?

Went on a very pricey cruise recently and repeatedly was served fake crab......and it was actually described as premium lump crab meat on the menus....we were NOT impressed.
Note: Surimi is VERY high in sugar!!

Stuffed Zucchini Recipes?

HI!
Have a good stuffed zucchini recipe? I love stuffed zucchini (or eggplant), but am looking for a different recipe. I'm vegetarian...........
My regular recipe is:
Cut zucchini lengthwise, scoop out center. Chop up center small, saute with onion, garlic, breadcrumbs, salt, pepper, a little thyme in olive oil. Place in bowl, add an egg white, mix well. Scoop into zucchini "boats"...top with a nice cheese, bake in oven till browned.

Would love to hear about some different recipes! thanks!

Amuse Bouche Recipes?

In a giant spoon....like the ones you have war wonton soup with (I have them if you need to borrow)....serve one medium sized grilled scallop with a drizzle of beurre blanc sauce that has a HINT of vanilla in it. SO GOOD

I'd like your favorite sandwich recipe and your least favorite food ingredient.

Hi!
My favorite is:
Moist sourdough bread with:
thickly spread cream cheese
mashed avocado
handpeeled shrimp
salt and pepper
onion sprouts
thinly sliced tomato
more cream cheese

Used to have it at a local sandwich shop all the time as a teenager, now i indulge a few times a year. Crusty buns work well too instead of the sourdough.

Things I HATE:
Onion soup mix.....my mother used to mix it into EVERYTHING! Ugh.
Anything that tastes "vegetable soup-like" Odd I know.....
Carmelized onions....they remind me of worms.
Anchovies.....so strong fishy tasting...gag!
Escargots...yep, not sure what the thrill of those are!
Saffron.....not sure if I've just had things not prepared well with it or what, but YECH.
Starfruit.....is it me or are they just a sweet peapod?
Risotto.....not a fan....have had it in the most fancy of restaurants, desperately tried to
like it....but it seems like overcooked mushy rice to me.
Fake crab.....So many people slip it into things....its fake! And so sweet! And not at
all the texture of real crab. Was on a cruise ship and ordered a fancy crab salad
supposedly using premium lump crabmeat.....fake crab or "kamoboko" was used
instead....awful!
Anything licorice tasting

Oh...and meat of any description!

DaisyM...I remember them!! They were heavenly! The ones we had in Canada (BC) were actually like a "freezie"....and were white in color....very strong vanilla taste. Not made of pudding....made of frozen flavored water I suppose! deelish!

Wish I could pinpoint the region! However he has encountered it all over Germany many times, usually at buffet meals. Together we have come across it a few times while travelling through Germany and Switzerland on numerous occasions. Personally it gives me the willies......leave the darn potato alone! haha

It does sound odd doesn't it? We've encountered the combo while travelling throughout Germany and Switzerland many times. My husband says when growing up in Germany he encountered it at buffet meals. He isn't fond of it!!

Anyone have a good praline recipe?

HI! These are from www.southernfood.about.com. Hope you like!

Southern Pralines
Ingredients:
1 cup granulated sugar
1 cup light brown sugar, packed
3/4 cup half-and-half
1/4 teaspoon salt
2 tablespoons butter
1 teaspoon vanilla
1 cup chopped pecans
Preparation:
Butter sides of a heavy saucepan (2-quart size). Add sugars, half-and-half, and salt to saucepan. Cook over low heat, stirring constantly, until sugar is dissolved. Raise heat to medium and continue to cook, stirring constantly, until mixture boils. Reduce heat and continue cooking to soft ball stage*, about 234° on a candy thermometer. Remove from heat.
Add butter and vanilla, but do not stir. Cool for 5 minutes; stir in nuts. Beat with wooden spoon until candy is no longer glossy and is thickened, about 2 to 3 minutes. Quickly spoon candy onto buttered baking sheets or waxed paper. If mixture becomes to thick to drop from a spoon, add a little hot water, no more than half a teaspoon at a time. Makes about 36 pralines.

*To Test for Soft Ball Stage
A small amount of syrup dropped into chilled water forms a ball, but flattens when picked up with fingers (234° to 240°).

How about right before serving tossing with some shredded arugula and torn basil leaves?? Throw a handful of toasted pine nuts in? Something yellow added might make a nice color combo...maybe some julienned yellow peppers or yellow tomatoes as well?

Mmmmm.. julienned cucumber is a great addition! Specially if added right before serving....would stay nice and crunchy!

I've also topped this salad with toasted cashews....really nice
