Help! My tzatziki sucks!!

Whoo boy, I'm sure to get flack here. Let me say, it's only to SAVE tzatziki, not to be used in a recipe EVER!! I do think if your tzatziki is lacking a bit of fattiness, a dollop of mayo just may save it. We're talking MAYBE a TBS.

best place to do wine and cheese tasting

Frog's Breath in Orange.
It's not exactly the most romantic place, but it is quaint and in the heart of Old Town Orange (which can definitely be fun and romantic). They are a cheese and wine store. The owner is very knowledgeable, and they will give you great, patient, service. Not only do they have wine tasting, but beer as well if you're so inclined. Afterward, if not too tipsy, I HIGHLY recommend strolling over to Gabbi's Mexican and getting the best mango margarita you've ever had.

Salmon .. take it to the next level

I humbly suggest my Maple Ginger salmon recipe. It honestly could not be easier.

how to get pepper oil off my face and hands

It may sound weird, but I have found that a good rub down with olive oil, and then a wash helps my hands, and face. I believe I heard somewhere that the olive oil mixes with the capsaicin which then is rinsed off with a good wash.
Sounded like hogwash pseudo-science to me, but when you're half blind with jalapeno-eye, you'll try anything.
Now, I just do it every time, and as long as I'm not absent-minded, I don't get the burn any more.

ISO Killer Apple Pie Recipe, but in which style?

I made this pie after discovering that suddenly my stomach HATES raw apples. If that wasn't unfortunate enough, I now had a big bag of apples from Costco that needed to be used. I found this recipe and made it - even w/ store bought crust. I couldn't be easier and has an almost caramel sauce to bind the whole thing. OMG. By far the best apple pie I've ever tasted.

Please Help - Good eats in Ontario - Corona - Chino Hills

Taps is a fantastic idea, but slightly too far. I am going to try to have our friends meet us as a surprise, and for sure my husband will wonder why we're going all the way to the 15 for lunch!! ;o) Dang, it's a great idea though. I will look in to Lucille's and BJs as well. You're right, they aren't bad chains and are used to big groups like us.

Please Help - Good eats in Ontario - Corona - Chino Hills

Hello!! I am taking my husband to the Chino Airport for his birthday. I would like to find a place besides Flo's somewhat nearby. We may be having friends that hail from the Temecula area meet up with us for lunch afterwards, so finding a place in Corona or Ontario would be reasonable as well.

I've had such a hard time finding a place good, nice, and big enough to fit my needs! At this point, I'm almost resorting to TGI Fridays. At least they have cocktails.

I'm desperate fellow chowhounds, and need all the help I can get!

Bacon Toffee!

I've been making bacon toffee around Christmas time for years. My husband insists on it! I use Martha Stewart's English Toffee recipe, and sub about 10 slices of bacon for the nuts. When it's hardened, you can wash off the grease and slather it with tempered chocolate. I prefer mine plain, however.

Pastrami Pizza

Pepperoni's in the OC has the same, and it is GOOD!! Their chorizo pizza is heart burn on a crust, but definitely worth it!

The location I know of is in Anaheim, off State College; but I believe they have three or four additional locations.

NOT boiled cabbage with brisket

I like somewhat crunchy cabbage, and my husband likes it cooked to oblivion; so I saute it. I cook up to 4 slices of bacon, set aside and crumble when cool enough to handle. In the bacon grease, saute a shallot 1min and add cabbage. Cook to desired consistency. Add the bacon back in. Personally, I take my portion out when it's where I like it (about 3 - 5min in), and then cook the bejesus out of it for the husband.

Thanksgiving leftovers? What's your fave?

Leftover cottage pie for us!! Just layer all dishes in a pie pan, ending with the potatoes. Bake at 350 until warmed through. SO GOOD!! Just like Sludge, but a bit prettier.

Mascarpone's in Orange -- ISO Feedback

Two years late coming to the party, but you've all have got to be kidding. They're chicken is dry and lacking, but any veal on the menu is fantastic. There's a three-four page menu. How is that not comprehensive? By far and away, the thing to get is the veal/gorgonzola ravioli in mascarpone sauce. In fact, anything in the mascarpone sauce is fantastic. Stick with the pasta, and you should not be let down. Especially the stuffed pastas. The only things I have been disappointed in are the chicken dishes and beef medallion dishes. Once they get to know you - cheesecake is more often than not comped. Pina colada, and apple pie cheesecakes FTW!!!

It is on the south side of Katella, west of Tustin. It's in a nondescript brown strip mall with a Red Wing shoe store and nail salon in it. Go around back to park.

Affordable OC King Crab?

Yeah, we went to Amber Waves on Saturday. The buffet is now 24.95. They didn't have enough menus for the four of us, so our two friends had menus. They saw that a cobb salad was all of 22.00. For cobb salad. I'm unsure how they ran out of menus as the dining room was a quarter full. That never bodes well, and there was good reason for that. The buffet looked sorry at best. Two skinny tiny crab legs swimming in dirty briney water. No one around to refill the dish. The prime rib looked ok, but there was no one there to carve it. Rare meat uncovered and unattended did not fill me with the utmost confidence. The only thing that looked remotely edible on the line was the garlic bread. I'm not spending 24.95 on garlic bread.

We bolted out of there, spent 3 more dollars each at Joe's Crab Shack and got plenty to eat. Again, I hate the atmosphere, but if the only thing that's cheaper is a sorry excuse for food, I'll brave it.

Affordable OC King Crab?

So far, I've found Joe's crab shack to be the most affordable but the weekend atmosphere makes me lose my appetite. Can't The Macarena die already? Any suggestions?

What to do with candied ginger

Our favorite party snack:
Take a flour tortilla (wrap style), slather with cream cheese, sprinkle chopped candied ginger and roll on up. Slice into wheels and serve.

My favorite part is eating the not-so-neat end scraps that don't look good on the serving tray!!

It is one of the easiest things ever, and seems so gourmet to others (well, those that don't cook much!!!). We like it plain just like this, but I would assume adding Thai Basil, mint, or pistachios would really jazz things up!

Real Diner Food in OC

Has anyone tried the Filling Station in Orange? It's off of Glassell almost across from Rutabagorz. They are only open Thurs - Sun, but their eggs benedict is some of the best I've had. The hollandaise sauce is rich with the slightest touch of lemon (I don't care for mine citrus-y). Otherwise, for dinner I've had a roasted vegetable "torte" which honestly was more of a HUGE slice of veggie pot-pie. The sauce allowed the veggies to be themselves and the crust was the perfect flaky and tender phyllo. YUM. Everything is definitely home-made, and I believe worth a try at least once.
