Authentic Sushi?

Well, not always taste vinager in the rice "Shari" but the balance of vinegar and sugar in Shari is very important as "Neta" (sashimi on the top of Shari) as well. There is great harmony of flavor in Shari and Neta so more vinegar is not always good. Also the quality of rice here in US is not good enough for Shari making, taste less sweet.

Like Kuidaore san is pointing out, Seabose is doing very good but taste less vinegar there. You can also try Teppo, Yutaka, Nobu in uptown. You can get more authentic sushi and other dishes there much better than "pan-asian" restaurants like Oish** and Genro**. There is a place called "sushi on Mackinney" or something on Mackinney close to Knox. It's not really Japanese style since the owner is not Japanese but Shari was more Vinegarate there as I remember. But I never want to go back to the place...

If you really want to try more vinegar, go get some seafood at Seabose and prepare your Shari as you like then have Sushi party is the way you would really enjoy your sushi :-)
