IDEAS FOR DINNER FOR 13?

Cheryl, we are setting up a grits station at an event coming up and I'm a little worried about cooking large amounts of grits (feeding 300 people) and keeping them from getting hard. Any tips you could give would be greatly appreciated. Thanks.

Thanks for taking the time to help. I'm cooking long grain rice and will be serving 1/2 cup portions. I would like light, individual grains and I won't be rinsing the rice before serving. I will be cooking it, then transporting it 45 mins. and then it will sit on a chafing dish for serving (however long that takes). Not the best scenario, but that's what I'm stuck with.

Corned beef... oven or stove?

I "third" the slow cooker recommendations. Mine always turned out great. I brought the slow cooker into work last year, plugged it in around 8AM and at 1PM we all had a great lunch. Lots of kudos! Also, I chopped up some cabbage and threw that in the last hour of cooking. Perfect.

Any tips for making large quantities of rice?

I'm going to be cooking white rice for around 150 and I'm worried about it getting too mushy. Should I cook small batches and then add together? Should I undercook it? It's going on a buffet so it might sit there for 30 mins. waiting on the wedding party to finish pics and start eating. Is there a way to keep it warm without it drying out or becoming mushy?

One of my new favorites is small skewers with cheese tortellini, cherry tomatoes, & sugar snap peas marinated for a couple of hours in a Champagne Vinaigrette. The colors are beautiful and it's an easy make-ahead dish that got plenty of oohhs.

I've been asked to cater this event. The charge is $25 for both father & daughter (just letting you know so I don't get Lobster or Prime Rib suggestions). I'm thinking there will be about 50 to 75 participants total. The food will be cooked and served in the same building.

I had thought about that also, the only problem is that everyone has tried the sourdough boule and I wanted something different. I'm looking for the "wow" factor. If you google "crouton basket" you'll find it on several restaurant menus. It is usually described as "crispy" in the descriptions. So I'm thinking more along the lines of a thin, crispy shell than an actual bread bowl.

I did see a pic (though I can't remember where) and it was hard to see the bowl since it was filled with a mixed green salad. The rim looked kind of rough like maybe strips of bread were flattened and then layered together (think lattice) over a glass bowl form to create a rustic, crispy, thin, bowl. I loved the idea of dressing up a plain salad by making the bowl out of croutons. I think "othervoice" is going in the right direction with her reply.
