Which sauce pan to use for cooking rice? Shallow/wide or taller/more narrow?

To all.....
Then there is the old 'finger' way to measure,
double the depth of water to the depth of rice..
(If I've remembered correctly ? )

I have always had luck with a 'electric rice cooker'... no guess work... just follow instructions..

Pasta with Arugula Pesto, Sun-Dried Tomatoes, and Pine Nuts

use almonds or walnuts for texture and less $$.
add fresh spinach to tone down the arugula
also less $$...unless you belong to a 'CSA"group.
be creative/adventurous...
use a 'recipe' as a guide !!!

Besides stew, what can I do with a leftover roast?

Slice or cube into smallish pieces... add salt, pepper, oil and vinegar maybe some thin
onion slices... serve over lettuce. Makes a great salad...my husbands favorite !

AT LEAST WHEN I FIRST DISCOVERED THIS SOUP (WITH PORK) WAY BACK IN THE '50'S--EARLY 60'S IN NEW YORK'S CHINATOWN...WHERE STARVING & BROKE ART STUDENTS EAT AT 10-11 O'CLOCK AT NIGHT.. THE GOOD OLD DAYS WHEN IT WAS REAL/ORIG. FOOD, NOT 'AMERICANIZED'

Cream Cheese and Chive Scramble with Prosciutto

I MAKE EGGS THIS WAY (SCRAMBLED,CREAM CHEESE, CHIVES) ALL THE TIME FOR MY B&B GUESTS... WITH HAM, BACON OR SAUSAGE ON THE SIDE GARNISHED WITH QUICKLEY SAUTED TOMATOES....THEY LOVE IT...BUT I'M GETTING BORED.. THIS IS A GREAT IDEA AND YUMMY CHANGE... THANK YOU !
P.S. WHEN THE CHIVES FLOWER I USE THEM AS A GARNISH AS SHOWN WITH THE SNIPED CHIVES...LOVELY COLOR ADDITION.

what are the finest brands for oyster sauce, fish sauce, soy sauce? and where is one stop shop to buy best brands in manhattan?

I use 'Kikkoman' for cooking...very good..never 'La Chow'.gross !
very much like YAMASA .regular and lite (color) for sushi and to make dumbling dipping sauce........Have jotted down many of the above recommendations..also have many in my own shelves, both frig & pantry. Will check out Hong Kong mkt. next time i'm in NY's Chinatown.. Living upstate ..thats the main thing I miss..the great ethnic choices (eating & shopping)!!... Thanks for the great reminders and hints !

I'M LOCAL... AND LOVE 'JA' ..THE TABLE YOU REFER TO IS MY FAVORITE ! NOT NEAR ANY OTHER DINERS..NO WAY TO HEAR THEIR CONVERSATIONS OR FIGHTS....ITS LIKE OUR OWN LITTLE CORNER.... WITH NO GENERAL 'NOISE' AS THERE IS IN THE REAR GARDEN ROOM OR OTHER GUESTS BRUSHING PAST YOU... AND EASIER TO GET YOUR SERVER 'S ATTENTION FOR SECONDS OF THEIR GREAT 'FOCACCIA' !
IT IS HARD TO GET GOOD SUMMER (INCREASED STAFF) SERVERS ... I THINK WHEN A PLACE CAN SERVE AND STAY ALIVE ALL YEAR... THEY MUST BE DOING SOMETHING RIGHT...SOME TIMES CAN BE HECTIC... BUT DONT HOLD ONE OFF/BAD SERVER STOP YOU FROM EATING AT ONE OF THE BEST AROUND....

great idea !! and I can control the salt !!!
should also work well with yogurt and/or feta chesse..
I use cucumber slices not chips..

I forgot about BRIX WINE BAR..lovely place..and with "Citroen'' models !
Is "FINS" the LOUD ,overly bright, good enventive sushi..but very high price$$$ ? Even with great food I haven't gone back.
Heard that 'Trattorio Ruustico" was only O.K.
IF YOU CAME ALL THE WAY DOWN TO G.B....TRY SOME OF THE REALY GREAT DINING SPOTS AROUND !! Go to the 'Chamber Info Booth' on Main St...they have all the MENUS to check out....
