Angus Beef (It's only a marketing term)

First of all.... IT IS IMPOSSIBLE TO GRADE OR PREDICT A GRADE OF BEEF ON THE HOOF....
Second: When you here Angus i want you to think >>> 100% Columbian ... we all thought thas was the best coffee in the world until we founf Kona, Blue Mountain, Kenya AA, Etc.
Third ... Angus is a breed of cattle referred to as the English Breeds whic hwere shorter, more compact, slower growing and better eating than either the African breeds (brahma) and the Swiss breeds (Dairy) .. So it takes longer to grow and longer to develop marbling..
Fourth ... Prime is a grade not a standard.. By USDA law it represents the top 1/2 of 1% of beef slaugthered in the USA. So in bad "corn" years it can be a pretty lean brand and in good (aka cheap corn) years it can be great.
Fifth ... CAB starting labeling Canadian Beef as Angus and Brangus as Angus .. All with the the intent of making the pennies per pound that it needs to survive... Is it really a great brand if you can get it at a national drive thru..
Sixth .. Dry aging is for professionals only and should not be attempted by anyone at home as it has some tremendous ramifications if you do not control the temerature, moisture and microbe content.

Go to High Rock Cafe ... the rasta pasta is great. Had a beer with Balck pepper in it, was really good. Great value as easily the best food in the Dells

Lao Lian Xing in Madison is some of the best Laotian Food i have ever had.

Had a great meal at Capitol Grill im Milwaukee just last week

In Hayward try the lumberjack ... really good

Cincinnati Nostalgia

There used to be a place at the top of the Terrace Hilton called the Gourmet room. I think it was supposed to spin but never did (some sort of regulation in the fifties based on this fear that it would spin off). Is it still there. George Pulver was the chef. Is he still around?

Good sushi in Madison, WI??

I have been to both Takumi and Muramoto within the last week and thought both were great. As with any sushi it is dependent on your ordering. Takame was traditional while Mura was more exciting. Do not do the Hibachi at Takame without lots of wine. Sushi was very good the second time as i saw stuff the chefs did better.

GOOD FOOD IN THE DELLS?

If you ever can't get in Moosejaw they own a second location called Buffalo Phils. Ate there and it was pleasant. The best part is the gameroom os seprate and quite over the top (knuckleheads) with an indoor roller coaster, etc.

Definate Harborview ... Nosh may be good but sitting on the porch / sidewalk at Harborview is one of my fav orite memeories of that area. Also last months gourmet magazine had a great article on the whole area including Nelson, Alma, Pepin, Hudson, and Lake city. Well written.

Wisconsin Cheese .... amazing

I had a chance week before last to tour a bunch of Wisconsin cheese factories. It was simply amazing. I tasted cheese as good or better than anything i tasted on my tours in france. A must tour for any foodie.

Roth Kaase in Monroe is a great stop. They give some tours, have a computerized smear machine, an unbelievable store, and distribute many of the artisan makers in Monroe. They also employ 5 master cheese makers. Obviously based on the amount of Swiss apprentices there they must be doing something right. Cheese to must try:
Buttemilk Blue -- un beliveable finish ..real smooth
Gruyere -- there signature
Van Gogh -- really great with a hazelnut aftertaste

Chalet in monticello is the last maker of limburger in the United States. If that isn't reason enough their baby swis has won international awards. Lots of german accents in hte long time workers

Crave Bothers in waterloo has the best mozzarella and Marscapone in hte world. 100% organic and they make all their own power. Marcapone so good it ruins you for all others afterwords.

Twin cities day trips-road food

Okay .. heres the scoop

Harborview is a blast. the menu is on a chalboard 9has been that way doe 20 years) food is outrageously good. Always ranks in the ten best restaurants in Wisconsin accoring to trails magazine. No bar (the sell you a bottle of wine and you sit on the curb waiting for your table), no reserrvations, and the most unbelievable view of the mississippi. Ask for Judy (she is one of the principals)

Trempleau is really great. Was once a hotel for the river traffic. in the spring they have great concert days filled with either jazz, blues, or reggae based on that day. The place is great. Try their walnut burgers. I also had a cajun pasta made with chili pepper penne and andouille sausage that was a blast. Ask for Max he is the manager.

In Trempleau there is an old time supper club called Ed Sullivans. Like a trip back to the fifties. manhattans in a tub the size of your head. Really a blast if you can still carry off the beehive hairdo.

Great Pie between MSP and the Wisconsin Dells

Nelson Cafe in Nelson, Wi (if you are taking the scenic route) Or even Harborview in Lake Pepin... amazing food

The Norske Nook is great and one of a kind pies...
While in Dells eat at the Fields.. great restaurant
