What does your Thanksgiving menu look like?

I'm making pumpkin curry soup and a sugar free mixed berry pie (using agave nectar) so my diabetic dad can actually have dessert. I'm even making the crust from scratch using coconut oil instead of unhealthy lard or dangerously unhealthy shortening.

The New Orleans Roast Beef Po-boy

I've had a Po' Boy like that somewhere (too much rum to remember where) and it takes the standard roast beef Po' Boy to a whole new level. I know cheese AND gravy sounds like over kill but in all actuality it is perfect. The mashed potatoes on the sandwich is how it should be. Sandwiches were not invented to be part of a meal but rather to be the entire meal.

Well, New Orleanians know how to party so if the locals are doing it then visitors will want to do it, too.

What is the quintessential food of your town?

My hometown of Mobile, Alabama is famous for two seafood dishes that both originated at the same small seafood restaurant: fried crab claws and West Indies Salad (lump white crabmeat marinated in vinegar, salt, pepper and ice water then served with crackers or over steak).

A Year of Food Books (not cookbooks)

I'm working on one of my own right now. I have the preface and fist chapter finished. It will probably be a year or two before I finish the whole thing. I will let you know when it's published if you want.

Fresh Salsa

I make fresh salsa at my cafe and we are considering retailing it as well. Fresh is so easy to make and you get about three times as much for the same price as the jarred brands.

The BBC Hell's Kitchen is light year's better than the US version. Ramsey is very human. He says the US version they prefer he cuss and scream more than he normally would.

Ella Brennan wins lifetime achievement award

I have not met Ella but I do know Chef Tory at Commander's and her cousin Ralph Brennan and both speak volumes to her spirit. She is a legend here on the coast and it is an honor well deserved.

Need Recs for Franklin/Nashville TN.

I was a fan of Herbert's BBQ in Franklin and there may still be a an Uncle Bud's Catfish House there as well. There are tons of places to eat in Franklin and the Cool Springs area. Enjoy.

Food that Most People Love and You Don't...

Ranch dressing. I just don't get it. I think it is the scurge of the American dining scene. I especially dislike people who sub it on a Caesar or Greek salad - what gives with that?
