You raped that one.......drinking Y'quem that young does not do it justice. That being said...by a 2005 and drink it in 2025 and then you will see the beauty of the wine. I am sitting on a 75 that is just about ready to pop. Probably in 2015 to give it the 4o years that it needed.

Aged Manchego Cheese - Spain
Black Foot Jamon Serrano - Hams air dried from pigs that are fed Chesnuts.
Oh I almost forgot......Kobe Beef .........only the real thing though, from Japan, does melt in your mouth. I do not suggest Wygu that comes from the States it just does not taste the same. Very spendy but you need to try it once in your life.

Dry aged vs Prime?

My choice would be dry aged 21-28 day prime..... rib eye bone in. best flavor The flavor in beef comes from the fat when you are grilling and so prime for the marbleing and aging for more flavor. But if you can only find dry aged choice go with that but not filet they are tender but without the flavor of a ribeye

I DO NOT LIKE EPAZOTE NEVER HAVE AND NEVER WILL........RANK FLAVOR ESPECIALLY WITH WINE. I HAVE LIVED IN MEXICO FOR 22 YEARS AND THAT IS ONE FLAVOR THAT IS NOT FOR MOST FOODIES IN MY OPINION. Now Hoja Santa that is another story........!!!!!!!!

Well who developed those charts??????? CAB ? They also only grade carcasses not boxes. In fact if anything the quality has gone down in the past few years and the guidelines are not really that strict. By Herford beef for the best taste in my opinion.

Canidian beef I am just not into it has a strange flavor to it. Don't know why but have done it blind with other steaks several times and I can pick it out everytime.

My opinion taste blind any day of the week the 1886 brand of choice beef at Costco to CAB and 90% of the time the Costco will win.....I have done it 26 times with a 90.17% success rate.
