question about pesto making

I've got an abundance of basil -intend to make and freeze most of it-one of the recipes said don't add cheese if intending to freeze-add when taken out of freeze-why??
I keep extra Parm in the freezer just because I don't use it every day, or even week...

Any answers would be greatly appeciated

I like Whole Foods recipe a lot and would like to make my own-looked on line and all I could find were turkey recipes, none hot.
Does anyone have a good one or suggest a book or source I could go to?

My roommate has been getting raw cow and goat milk the last couple of weeks from the farmer's market @ 63rd and Brookside and wants to make mozarella-does anyone know where I can suggest he go? Thanks!
