What's for Dinner #295 - The Crazy Weather Edition [through May 4, 2014]

Cold, wet and windy here. The type of weather that screamed comfort, which to me was brought by taco Tuesday.
Both hard, and soft, tons of fixings, sides of refried beans and yellow rice. Followed by peanut butter cup brownies with vanilla & caramel gelato for the boys

I thought we'd be running around tonight so loaded up the crockpot with skinny taste recipe for sante fe chicken. Thanks to Mother Nature, plans have changed, and we will be home. Good news is, dinner is already done.

Eating pizza or burger w/ knife and fork

I spent 2 painful years undergoing full mouth dental reconstruction. I couldn't bite into food without pain or a really weird tooth feeling. Considering I love to eat, I started using a knife and fork for EVERYTHING. Now, it's force of habit, plus I'll never forget that sharp shoot of pain that went straight to my brain.

What else can I do with kale and swiss chard?

I use kale to make a sausage, white bean and kale stew. We also make pulled pork with an apple/kale slaw. Really cuts the kale bitterness. I have also made roasted pork sandwich with kale and sharp provolone. Delicious

Potato and cheese Pierogies for the boys (they had a special new brand at bjs this weekend) husband went crazy over the jalapeño flavored ones, so I'll make those for him. Roasted broccoli on the side. I cannot wait to eat, so I just made myself a veggie burger with a side of couscous and green beans. Everyone will be happy, and maybe I'll bring out the fancy plates again. It can make an appearance beside the special pierogi plate

Made some great chocolate chip cookies for the boys lunch treats this week. Been tweaking a recipe since I was as old as my youngest chow pup. Crispy outside, soft centers, and overloaded with chocolate chips. They were such a big hit, that there are only a few left, so looks like I'll be baking another batch tomorrow.

Beef filet tenderloin, mashed potatoes (couscous for me), green Beans with garlic, sourdough bread and my made with love, and double chips, chocolate chip cookies. Had to do the roast in the oven, as I realized the winter must have killed my grill. Youngest boy set the table with the fancy wedding china, because "steak should always be served on fancy plates." We are all deliciously stuffed

Just purchased some amazing Balsamics. Need help.

Bourbon peach would be great with chicken too

Roasted chicken is always a hit with my picky eater. You can roast the broccoli with it. Serve with potatoes or rice.

Yay, a spring like day today. Had to play chauffeur to the husband, so I swung by wegmans after picking him up. Got a pizza to bake for he boys, and a rotisserie chicken and bean salad for us. Made a huge salad with lettuces, tomatoes, corn, black beans, bean salad mix, cheese, & chicken. So good, just wish I had remembered to pick up an avocado. Sitting on the porch, drinking an icy cold diet coke, eating my salad, enjoying the sun....while it lasts

What's for Dinner #288 - April Fool Edition! [Through April 3, 2014]

I'm still constantly starving, so tonight's dinner is red beans, sausage and rice. Spiced it up with a dry Cajun mix, and some franks. Also added some tomatoes, cause they looked like they might be turning. Hopefully a stick to your ribs, protein packed meal will finally fill me up.

Can canned crescent rolls be prepped ahead of time?

I popped them in the oven frozen. Seemed to turn out fine, although 14 & 12 year old active boys don't tend to have discriminating taste. ( I've also made pigs in the blanket with them that went freezer to oven) They too, seemed to puff up fine. But again,my boys are like Hoover vacuums of the eating world, especially post soccer games :)

DC visit in June with kids

Was there with my 2 boys in May. Ethiopic was wonderful. Eating with your hands was totally cool to my kids. The food was not crazy spiced and even the picky boy enjoyed the beef tibs. Service was wonderful, waitress even brought tiny portions out for my son to try, just because. Can't say enough good things about this place. The boys also enjoyed bens chili bowl. Yes I know it's touristy, but they were super gracious with their service, and the boys got a kick out of the pictures lining the walls

good cheap eats and one good cheese steak

Love Philly. Was just there Friday, and Sunday. Highly recommend johns roast pork. It's incredible. Reading terminal market is a zoo in itself, but we love the Philly zoo. Had season passes for several years when the kids were younger.

Can canned crescent rolls be prepped ahead of time?

I make ham & cheese stuffed crescent rolls for my kids often- kind of like a homemade (cheater) hot pocket. You can even prep, then freeze them. I've stuck them in the fridge too, they'll be fine

I was too dismissive of the blt. Perfect thick cut pepper bacon (courtesy of the Amish market ), and the tomato actually had taste. It was a simple winner dinner. Now time to soak my aching legs, lay down, and tear into my new book.

I ran a half marathon yesterday and today I want too eat ALL the food. Mexican feast (chicken fajitas with rice,beans and extra guacamole ) for lunch, a mid afternoon snack of leftover vegetable fried rice & general Tso chicken, a bag of pretzels, half a mini watermelon and I'm still hungry. I'm thinking blts for dinner. I need something that doesn't require much prep, because darn my legs are killing me. I'll serve with some chips and baby carrots. Not particularly exciting, but I think they'll be acceptable to all.

What food have you lost a taste for?

I never thought it would happen, but for me, it's red meat. I've been cutting back from twice a week, to monthly, to every six months for a few years now, and when I took a bite of my sons burger, I realized "I just don't like this taste/texture anymore." I then tried a piece of my husband steak, and the same thoughts went through my head. Final nail was the cheesesteak . Now Philly cheesesteaks have always held a very important place in my heart, and imagine my horror when I took a bite of one today and thought "no thanks, I'll stick to roast pork, provolone, and greens" I know there's food people can't eat as they get older due to allergy/stomach issues, and I know most people (besides me) grow out of a taste for cotton candy, circus peanuts, and candy corn. But red meat? Oh the horror and shame....so tell me, is there a basic food you used to love, but now don't really like?

What's for dinner #287: The adios to winter edition [Through March 30, 2014]

Tonight's delicious dinner is curtesy of johns roast pork in Philly. Picked up a few roast pork with provolone and greens, one pizza steak sub, and one regular cheesesteak. After dealing with parking, construction, and traffic, plus the craziness of reading terminal market (how hard is it for people to put their phone down and walk normally) it is heaven on a roll. It was all worth it for that delicious piggy sub

What to make and/or have on hand for out of town guests?

I was the happiest guest when my host, a non coffee drinker, had coffee, sugar, and creamer for me in the morning. It was so thoughtful as I knew they weren't coffee drinkers, but had gone out and purchased some. I was so happy not to have to run out at 7am. (I am not right until I have some coffee). Also, they placed mini water bottles on my nightstand. That was also super kind. Sometimes, I get thirsty in the middle of the night, and don't feel like rooting around a dark unfamiliar house.

Off to Philly tomorrow too, but I'll be partaking in a lovely roast pork, broccoli rabe with sharp provolone. I'll bring some plain old cheesesteaks home for dinner. I'm pretty sure the husband has figured out the reason I MUST run races in Philly ;) enjoy your meals, menus look fabulous
