Well, it TASTED better that regular fat to TT, which is why I put it in quotes. That was the thing, some people ate it, while others trimmed and left it on the plate. It was served as a starter over a recent dinner.

That's basically it. There's the rich, red central meat part, and then there's the white or pale pink "fat" surrounding the edge. Is it proper to trim this off before you serve it, or self trim and leave on the plate once you've been served?

TT recently got a bill which was wrong (because I ordered in two parts and a different person took the order than who brought the bill and only half was brought to me). Part of the order was not very good anyway and I was wihsing I never ordered it. So when the bill came, I felt it was just my lucky day. TT paid in cash and quickly left, never to return. Bad TT!!!!

(I know you'll all say it was wrong and stuff, but if I'd said "look, this stuff is really terrible" they wouldn't have caresd. It's not that type of place.)

Tilapia with basil and lime or Balsamic butter or chili-Cumin rub

C) Chilli cumin garlic rub. But I would keep an eye on it as tilapia is kinda thin (if filleted) so you don't want to overcook it.

Careful about superlative though. "Sweet Strawberries" don't really have to be sweet, but they DO have to be strawberries.

Interestingly, jfood, a similar thing has happened to TT only once . . . in London of all places. The food was inedible, TT did not eat it, sent it back, and refused to pay (was the only thing ordered). Figured it was best to not trust them with making anything else. So the owner calls the police and the police tell him it's a civil matter and the owner can sue TT for the money. TT flew home and never heard a thing. But I think that might be perculiar to British law.

Too much cilantro

Make an Indian green chutney. This freezes very well. Use the cilantro (plus stems), some garlic, green chillis, salt, lime juice, and blitz the while thing until smooth. If you can get it, use a tart green mango (or a sour apple) also, for that spreadable consistancy.

The whole stuff does not freeze well at all. Yes, you can do it, but it doesn't thaw well.

Does the hard anodized non stick cookware flake?

Mine hasn't flaked or damaged yet, but I'm careful.

That said, Chuckles the Clown says in the below link that the stuff will wear off eventually.

I disagree with jfood on this one. Yes, you tried to bring the error to the server's attention, but you KNEW the bill was wrong, so you really couldn't in good conscience pay $40 and leave. If you buy a BMW and they give you a receipt for a Mini, you know something's up.

On the other hand, TT recently paid cash for a meal and received more change that was due (by a few bucks) and so left the extra as a tip (so the tip didn't all come out of my money). That's okay, but if I paid with a 20 and recevied changed for a 100, then I'd know something was up!

So are you looking for the GR type experience? There's always L'atelier de robuchon ar somewhere like Arbrutus, but it's not a Fat Duck type of thing. Very good though.

Yep. TT has been stating this for many years now. The Green Oaks location in Arlington is always packed and with good reason. Service can be slow, but then perfection takes time.

Non-stick frying pan suggestion?

TT does not generallt use any type of "coated" non-stuck pan. I do have some hard anodized pans, but the difference is that the entire pan is made of the same material so there's no coating to rub off.

Price "Gouging" (moved from Austin)

TT agrees with jfood . . . unless (you didn't see that one coming did you) the salad is one of those micro herb "garnish" salads that really isn't a salad after all. In that case, it's more like half a salad (which using jfood's formula) can be coupled with another side.

There's a Chinese place also near Swiss Cottage (though it might be closer to Finchely Rd) called Green Cottage that alwyas seems busy and is not too bad.

This is not the first time TT's heard of it, in various states. Oftentimes, places will give a small portion of rice when you dine in and subsequent bowls are an extra charge. But this is the first time no rice was included at all. Very odd. Is it not stated on the menu?

Help! Dinner for one

TT seconds the chicken idea. But also just plain pasta noodles with some fresh parmesan, truffle oil, and black pepper works wonderfully! Or you can replace the oil with some bacon and a dash of heavy cream for a completely different taste.

How to get the "good" server?

Maybe there was a reason you were the only people in her section?

TT would have just asked to be seated in the "good" server's section. TT has done this a few times. If TT didn't "gel" with the server or if things looked as though they would get bad, TT would ask to be re-st. Of course, in places TT frequents regularly, TT asks for servers by name and that works out quite well.

Jfood at Stella - Not a Good Experience

Gordon just did a similar spice rub on some monkfish and it looked amazing! The dark, mahogany lacquer, with the pure white flesh.
