Gluten is not present in the flour. Gliadin and glutenin are present and do not form gluten until they come in contact with water. The term "Create" incorrect in this instance. When you mix the flour with fat you waterproof the flour granules and prevent gluten formation. If overwork your pie dough you'll expose more flour to water and create gluten.

How do you define trashy?

For me it was the white trash food I grew up with, Tomato soup instead of of pasta sauce, pork chops braised in mushroom soup, the big dish of bacon fat next to the stove that everything was fried in.

Though I did have what I called a white trash feast a short time ago, Fried Pork Chop in a potato chip coating, and Tater-tot blue cheese casserole. (Both courtesy of Alton Brown)

I thought it was excellent, the nutty flavor of the wild rice goes really well with the squash.

Five-Spice Roasted Chicken

I don't know if I did something wrong but I didn't care for it at all. It smelled great cooking but the garlic overwelmed the chicken. Also the garlic and shallots turned into distastefull paste under the skin.

Salmon and Egg Salad

I made this. Fantastic salad but I didn't get the point of the egg, other than it was required for the contest. It didn't add anything, actually I thought it took away from the salad.
