CHOW Bagel

Tried this with a bit of malted milk powder and less sugar. Also changed the pH of the boiling water by using Harold McGee's recipe for intensifying baking soda, similar to using lye when making authentic pretzels. Awesome crust!!

Still not the right interior. Part is probably due to my timing/heat but I'm also not getting the right "crumb". My guess is the protein content of the flour.

Any thoughts?

Maggie's Farm - Stellar Mix

Maggie's Farm is at many of the Los Angeles farmer's markets. Their "Stellar Mix" with edible flowers is to die for! I now live in Orange County and can't make it up to the LA farmers markets. Does anyone know what goes in to this amazing salad mix?

Where is the best sourdough bread?

The sourdough served at the Crab Pot in Long Beach is fantastic. Very sour and made fresh. Sometimes I'll just order a few loaves to go.

More Chemicals in my Food

Is there a place in the LA or OC area that sells any of the chemicals used in Molecular Gastronomy? Stuff like Methylcellulose, Sodium Alginate, Calcium Chloride, Citric Acid, Gellan, Xanthan Gum, etc.

I know you can get all of these things online and I've done so in the past. I'd prefer to find an actual store for impulse and inspiration. Sometimes I put together crazy dinner parties on short notice and can't wait two weeks to get Xanthan Gum shipped.
