What makes Jambalaya Jambalaya?

A good freind from New Orleans who taught me how to make Jambalaya insits you must use Andouille Sausage. Other meats / seafood are interchangeable depending on your mood, but you have to use Andouille Sausage. Brown the meats and remove, then slow cook green pepper and onion with lots of tyme in the drippings for about 20 minutes, add rice and saute for a few minutes, then stock and meats/seafood. Spice with Trappey's or a similar hot sauce.

Ricotta dinner recipes that aren't stuffed shells or lasagna?

Pizzarustica ... there are several ways to make it. My favorite is with ricotta, eggs, proscuitto and mozzarella. Basic pastry pie crust filled with ricotta blended with 3 or 4 egg yolks. Chop 1/2 pound-or-so of proscuitto and 1/2 pound of mozarella (fresh is best!) and push into the ricotta mix. Place pastry top on, pinch edges, paint with egg yolk and punch some holes ... just like a pie. Bake 350 for about 45 minutes and let cool before serving. And yes, you can also add ricotta to hot tomato sauce and serve on pasta... best with Rigatoni. Don't cook the ricotta though, just add it to the sauce at the very end before putting it on the pasta.

Peter Luger's dinner (Williamsburg, Brooklyn)

Had a heavenly meat-eating experience there a couple of months ago. I must have gotten a good cut of bacon. It was excellent ... especially with the tomato/onion salad. Service was great and the waiter even told us we were odering too much food (which we were) and saved us some money!

What is going on @ Smith Street

As with most areas that become hot, innovators are inevitably followed by mediocrity trying to cash in. It's not just restaurants and it's not just Smith Street. I agree that the character is changing ... becoming more commercialized, but there are still a lot of good places holding their own including a few recent additions. Create the market by supporting the establishments that get it right. As far as the neighborhood debate goes ... they're all Brooklyn and as we all know, it is the center of the universe. So, fa-get-about-it!

Brooklyn Bridge dining

Noodle Pudding on Henry Street serves really great Italian food (I know, strange name). Here an article about it http://nymag.com/listings/restaurant/noodle-pudding/ It's a few blocks from the pedestrian walkway of the bridge, but there is nothing much closer. Depending what time you go, it can be a long wait. Can't remember if they take reservations. Pastrami or a hot dog?

Eating at Yankee Stadium unfortunately is not a must-do. I wish it were. But if you do, get a dog on the field level between Home and First. I can't think of the vendor’s name, but this particular stand really grills them up and serves with sauerkraut, which most do not. The second best option at the stadium is a sausage and pepper hero. But really, this is not a reccommendation and everything is obscenely overpriced, including water. Crackerjacks and a Bud will run you about $15, if that's a good indication. There's all kinds of regulations about what you can bring into the stadium in what kind of bags. So, you should check out their web site. Let's go Yanks!

Caputo's for sure! Also try a Penelle Special at Ferdinando's on Union Street (Columbia/Hicks). And there's always Vinny's for a hot hero. But yeah, there are a bunch of old neighborhood places now gone that are missed.

Help with my cooking nemesis - rice!

1.75 to 1 is a better ratio. Bring water to a boil with rice in the water. When it begins to boil, stir well and simmer covered until water cooks off (20-30 minutes should do). Don't touch it after this except to check that the water is gone. Then let it sit covered for about 10 minutes after it is cooked.

Take away for picnic in Prospect Park

Depending where you are coming from ... we often pick up a middle-eastern spread for Celebrate Brooklyn concerts at Sahadi on Atlantic Avenue between Court St. and Clinton St (Cobble Hill/Brooklyn Heights area). There's a great preapred foods counter in the rear of the store. Now, I would never do this, but some people bring wine into the bandshell area in a green plastic ginger ale bottle ;-) I believe they sell beer inside the gate.

For lunch in Carroll Gardens check out Ferdinando's Focacceria on Union Street between Hicks St. and Columbia St. You won't be sorry! Another great spot in Carroll Gardens is Frankie's 457 on Court Street near 4th Place.

New Pizza, Carroll Gardens

I agree that Marco Polo is worth a try. I've had a few really good pies there and a couple that were so-so. They use a wood fired oven and have some good toppings. I particularly like the broccoli rabe and sausage, which is a white pie. Their red pies are not saucy enough for my liking, but are tasty. Does anyone remember The House of Pizza and Calzone before it was renovated and eventually sold? Now that was pizza from heaven. I look forward to trying S. Bklyn Pizza.

Beer recs for backyard bbq

Went to a bbq recently where they served bottled Miller High Life. I haven't had one in ages! It was really good and worked great with the food. The best bet, unless doing a keg, is to serve three or four varieties in a big cooler with lots of ice. I'd go with Stella Artois, Corona, Sam Adams Summer and Miller, since I just suggested it.

ISO tasty stuffed peppers recipe

I do them with sautéed cubed eggplant; sautéed garlic, pine nuts, and capers (sauté these together first, remove and use same pan for eggplant); chopped fresh basil, plain croutons, and chopped black olives. Clean peppers, roast on grill or open flame until the start to blister and slightly blacken. When everything cools down a bit, mix stuffing ingredients in a bowl, stuff the peppers and bake about 45 minutes at 350. Save the tops when cutting them open and put them back on before baking. This is my grandparent’s method (from southern Italy). I've never tried substituting zucchini. It might work fine, but won't have the same kick as eggplant.

I saw a recipe calling for peach schnapps on drinkstreet. Some raves, some pans. Sounds like a recipe for an early evening to me, but thought I'd ask here. And yes, the choice between fresh and frozen is obvious now that you mention it. I'll be making a lot of them and was thinking of covenience, but that's probably not a good idea.

Any suggestion on proportions?
