First time making potato salad, question about the potatos

Something else to consider is baking your potatoes. I had a few baked potatoes left over from a previous meal so I make a quick potato salad out of them. I was pleasantly surprised at how well it turned out. The potatoes were firm and held their shape when I mixed them in with all the other ingredients.

good luck!

Latest Charlie Burger

I believe this dinner is on May 6th. If you don't get a response (confirmation) by May 4th, you likely didn't make the cut.

Titanium Spork

Try LeBaron. I know they have sporks I'm just not sure if they carry a titantium one...

Ooey Gooey Versus Crispy Crunchy

Can you help me understand how crunchy or gooey is measured in a flavour?

For me crunchy and gooey is a texture and not a flavour...

Using oven's self cleaning cycle for preheating pizza stone?

To overcome that problem I roll out the pizza dough on a piece of parchment paper. Cut the parchment half inch around the pizza except for a 3 or 4 inch "handle" I then slide the pizza with the parchment onto a cookie sheet and use the cooke sheet to transfer the pizza onto the pizza stone.

I usually cook my pizza without cheese first and then add my cheese on top the last five minutes of cooking. I remove the pizza by using the "handle" back onto a cookie sheet and add the cheese. Then slide it back onto the pizza stone without the parchment. The pizza dough should be cooked enough that is holding it's own.

good luck!

menu planning with 13 year old niece

I really like the cupcake idea. It's easy and can be lots of fun with the decorating...

menu planning with 13 year old niece

depending on weather... I would like to use the BBQ pit but if the weather is really awful, I"ll resort to cooking inside.

there will be 10 of us for dinner. kids are teenagers now, so I consider them adults

menu planning with 13 year old niece

we're a very food friendly family so anything goes...

the kitchen will be empty per say. since it's the cottage aside from a blender (for blender drinks) and pots and pans, there's not much else. I will take any special equipment that we need from home.

there is a BBQ pit and an electric oven.

menu planning with 13 year old niece

Need some help planning an easy menu that my niece and I are going to prepare at the cottage Easter weekend.

This is our first foray into cooking together. I'm hoping for some easy ideas that are tasty.

We're planning on an appetizer, main course along with a starch and veggie and dessert. We will have two days to prepare for the meal. One day I would like to dedicate to dessert as we will be celebrating a few family birthdays.

Any ideas??

thanks in advance!

Favorite Deep Fryed Chicken Wing Recipe

that sounds amazing, care to share the recipe??

Potato salad secrets?

Risolje is absolutely my favourite version of potato salad. Anyone interested in eating should try it. The apple and herring along with the beets really make it pretty awesome.

tomato sauce for pasta when to add spices

my (loose) rule of thumb is dried herbs in the beginning with the tomatoes, fresh herbs at the very end. Cooking fresh herbs for too long kills the flavour.

My Leaf Lard Pie Crust Has Sinew in it.

It seems to me that if you can run your fingers through it it must already be rendered?? But you did mention that you watched the butcher cut off a piece so it must not be rendered??

If it is already rendered, I would melt it again and filter out any undesirables. If it truly is a piece of un-rendered lard, I would suggest, like others have, that you're going to have to render it for it to work properly. Time consuming as it is, it is worth the effort.

ISO: Whole Freeze Dried Corn Kernels

I think this is what you`re looking for...

I`ve used them for years for camping food

I made a terrible cake.. how to keep it from going to waste?

Cut it into bite size pcs, freeze it and give the dog a treat once in awhile. At least it will make someone happy.

The last bad cake I made the dog wouldn't even touch, consider yourself lucky!

Kumquats in the GTA?

Longo's (Rutherford location) had them on Sunday. I didn't pay attention the price but they looked plump and fresh.

Crack Pie Recipe

I order by phone. I know they're located in Mississauga but I'm not sure where exactly. I usually place an order over the phone and they send it out by ExpressPost. Great people to deal with.

let me know how your crack pie turns out, I'm going to make one also but I'm waiting for when I have a full day to dedicate to it.

Crack Pie Recipe

Bauly carries freeze dried corn and all sorts of other freeze dried foods.

We've bought from them for our camping meals and have always had a positive experience dealing with them.

Bread machine help!

I'm going to suggest that yes, that's way too much yeast. The consequence of that would be a huge loaf of bread that is trying to escape the bread maker.

If you have access to a scale, I would use a weighed measure as opposed to a measured measure. It's far more accurate that using measuring spoons (which vary in size).

One other thing to watch for is when you're adding yeast, make every effort to make sure it doesn't touch the salt or sugar. That (apparently) will compromise the yeast and make your loaf fall.

Baking is an exact science, even with a bread maker. Follow the recipe as closely as you can and you will have some warm bread in no time.

good luck!

achiote paste

No, I don't believe they carry the seeds. We have picked up Achiote seeds somewhere in the city (toronto) but I honestly don't recall where. I would think the seeds are probably available from Kensington Market. I would start with Perola's.

achiote paste

Highland Farms on Rutherford also carries it. I'm not sure about their other Highalnd locations but if one does, I'm guessing the other locations do as well.

2012 Michelin Stars

I agree with nsxtasy. We were there in October and really the only part of the meal we thoroughly enjoyed was the Amuse (mini lobster roll). Other than that that rest of the meal was MEH. What disappointed us the most was the A11 beef was removed (menu on their website at the time indicated A11 Wagyu) and they told us they're now purchasing their meat from the little old grandma in the US somewhere. Although the story was "cute" it didn't make up for the fact that the meat was no where near A11 quality... big big disappointment for us.

Carrots in stuffing?

my stuffing has carrots in it also.

I shred them instead of chopping them.

I think it adds a nice colour.

Homemade Corn Tortillas

Heat is something that is hard to suggest as everyone's stove is different. The type of cooking vessel you use also makes a difference.

I use a cast iron comal on a gas stove set to 7 (on a 14200 btu burner)

I know this doesn't answer your question but it may be useful as a guide.

good luck!

bayless cookbooks

I had requested a personalized book but Rick was out of town. I did get a sense that that may be a canned response. There is no harm in asking though as I could be completely off base. Just ask at the reception/front desk.

good luck!

bayless cookbooks

Yes you can. We were just at Frontera and Topolo this past weekend and picked up a signed cookbook (Mexican Everyday). I believe all the books that are for sale at the resto are already signed by Rick.

enjoy Chicago, we did and have already made plans for our return in May :)

cheers

Best chopped liver in Toronto?

Centre Street Deli also carries chopped liver and fried onions.

I"m far from an expert but I find it quite palatable.

Pickled/preserved Herring in Toronto (NOT sweet)

I highly recommend Viking brand matjes herring. I used to be sold at Highland Farms but I haven't seen it there for the last few months. The No Frills on Centre Street carries it and you'll likely also find it at most eastern european delis.

matjes herring - yum yum :)
